This vibrant 10-Minute Green Olive Tapenade is a flavorful Mediterranean-inspired relish perfect for elevating appetizers, sandwiches, or serving alongside hummus. Made with a mix of Castelvetrano and medium green ripe olives, capers, fresh herbs, and a hint of lemon, it offers a tangy, slightly spicy, and herbaceous spread that’s quick and easy to prepare.

Ingredients

Tapenade Ingredients

  • 1 1/2 cups (155 grams) Pitted Castelvetrano Olives, drained
  • 1 1/2 cups (170 grams) Pitted Medium Green Ripe Olives, drained
  • 1/2 teaspoon Lemon Zest
  • 2 teaspoons Lemon Juice
  • 1 1/2 tablespoons Non Pareil Capers, drained
  • 2-3 Plump Cloves of Garlic, adjusted to taste
  • 1-2 pinches Red Pepper Flakes
  • 3 tablespoons Fresh Basil or Parsley, roughly chopped
  • 1/4 cup (50 grams) Extra Virgin Olive Oil, plus more to taste
  • Fresh Ground Black Pepper, to taste

Instructions

  1. Prepare Ingredients: Drain the olives and capers well to reduce excess moisture which could dilute the tapenade’s bright flavors. Roughly chop the fresh basil or parsley if not already chopped.
  2. Combine in Food Processor: Add the pitted Castelvetrano olives, medium green ripe olives, lemon zest, lemon juice, drained capers, garlic cloves, red pepper flakes, chopped herbs, 1/4 cup extra virgin olive oil, and a few twists of fresh ground black pepper into the work bowl of a food processor fitted with the S blade.
  3. Pulse to Desired Consistency: Pulse the mixture 5-6 times to begin breaking down the ingredients. Scrape down the sides of the bowl and pulse a few more times. For a chunkier relish, process less; for a smoother paste or spread, pulse longer. The result should be a texture perfect for spreading on crackers or topping dishes like hummus.
  4. Adjust Consistency and Seasoning: Taste the tapenade and adjust seasoning as needed. Drizzle additional olive oil by tablespoons if a looser consistency is desired, then pulse briefly to incorporate.
  5. Store or Serve: If serving immediately, keep the tapenade at room temperature for a few hours. For longer storage, place in a lidded container and refrigerate for up to two weeks. Bring to room temperature before serving to enhance flavor and texture.

Notes

  • Use pitted olives for ease of preparation and better texture.
  • Adjust garlic amount depending on your preference for pungency.
  • Fresh herbs like basil or parsley can be swapped or combined for personalized flavor.
  • Red pepper flakes add a gentle kick; reduce or omit for a milder version.
  • Tapenade flavors intensify after resting a few hours in the refrigerator.
  • Serve with crackers, bread, or as a topping for snacks and salads.
