This quick and flavorful 20-minute egg roll bowls recipe combines ground chicken, cole slaw, and scrambled eggs in a savory hoisin-soy sauce, all cooked easily in one pan for a satisfying meal that’s perfect for busy weeknights.

Ingredients

Protein

  • 1 pound ground chicken
  • 3 large eggs, whisked

Vegetables & Aromatics

  • 4 scallions, thinly sliced (separate white and green parts)
  • 3 large cloves garlic, minced
  • 1 tablespoon grated or minced fresh ginger
  • 1 (14-ounce) bag cole slaw

Sauces & Oils

  • 2 tablespoons neutral oil, divided
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1/2 teaspoon toasted sesame oil

Seasoning

  • Fine sea salt and freshly-ground black pepper, to taste
  • Furikake seasoning or toasted sesame seeds, for garnish

Optional

  • Cooked rice or noodles, for serving

Instructions

  1. Cook the chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken and season with fine sea salt and freshly-ground black pepper. Cook, breaking up the meat with a wooden spoon, until browned and fully crumbled. Transfer the cooked chicken to a clean bowl and set aside.
  2. Cook the cole slaw and aromatics: In the same skillet, add the remaining tablespoon of oil, the white parts of the scallions, minced garlic, and grated ginger. Sauté for 1 minute while stirring constantly to release the flavors. Add the bag of cole slaw and sauté for another 2 minutes, stirring occasionally until the cole slaw is slightly wilted.
  3. Cook the eggs: Push the cooked cole slaw mixture to one side of the skillet. Pour the whisked eggs into the empty side and cook, gently scrambling until the eggs are just set and broken into small pieces.
  4. Combine all ingredients: Return the cooked chicken to the skillet. Add the hoisin sauce, low-sodium soy sauce, toasted sesame oil, and the green parts of the scallions. Toss everything together thoroughly until evenly combined and heated through. Taste and adjust seasoning with additional hoisin or soy sauce if desired.
  5. Serve: Serve the egg roll bowl warm on its own or over cooked rice or noodles if preferred. Garnish with furikake seasoning or toasted sesame seeds for extra flavor and crunch. Enjoy your quick, satisfying meal!

Notes

  • You can substitute ground chicken with ground turkey or pork based on preference.
  • Using pre-shredded cole slaw mix saves time; fresh cabbage can be chopped if preferred.
  • Adjust the amount of hoisin and soy sauce to taste, especially if you prefer a sweeter or saltier flavor.
  • Furikake seasoning adds extra umami and texture, but toasted sesame seeds work well as a substitute.
  • Serve with rice or noodles to make the meal more filling, or enjoy it on its own for a lighter option.
  • Make sure to separate the scallion whites and greens for better flavor layering during cooking.
