This 25-Minute Blackstone Corn on the Cob recipe offers a flavorful and easy way to enjoy fresh corn using a griddle. Coated with a savory blend of parmesan cheese, butter, mayonnaise, and spices, then wrapped in foil and cooked to perfection, this dish is perfect as a side for any summer meal or barbecue.

Ingredients

Cheese Mixture

  • ½ cup grated parmesan cheese or cotija cheese
  • ⅓ cup butter, melted
  • ⅓ cup mayonnaise
  • 1 teaspoon chili powder
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

Corn

  • 4-6 ears fresh corn, shucked and cleaned
  • Cooking spray (for foil)

Instructions

  1. Preheat the Griddle: Heat your Blackstone griddle to medium-high heat, aiming for a temperature between 375°F and 425°F. This ensures even cooking and a nice roasted flavor.
  2. Prepare the Cheese Mixture: In a small bowl, combine the grated parmesan (or cotija) cheese, melted butter, mayonnaise, chili powder, sea salt, and black pepper. Stir thoroughly to create a smooth, flavorful spread.
  3. Prepare the Foil Wraps: Spray six pieces of foil with cooking spray to prevent sticking. This will keep the corn moist while cooking on the griddle.
  4. Coat the Corn: Brush the cheese mixture generously over each ear of shucked and cleaned corn. Then wrap each ear tightly in the prepared foil.
  5. Cook on the Griddle: Place the foil-wrapped corn on the preheated griddle and cook for 13 to 17 minutes. Flip the foil packets every 5 minutes to ensure even cooking and prevent burning.
  6. Serving: Once cooked to your desired doneness, carefully unwrap the corn and sprinkle additional parmesan cheese on top if desired. Serve hot and enjoy!

Notes

  • You can substitute cotija cheese for parmesan for a different but equally delicious flavor.
  • Adjust the chili powder to taste for more or less heat.
  • Use fresh, sweet corn for the best results.
  • Be careful when unwrapping the foil as steam may escape and cause burns.
  • This recipe works best on a Blackstone or similar flat top griddle but can be adapted for a grill with foil packets.
