This simple and delightful recipe for 3-Ingredient Coconut Macaroons captures Nonna’s traditional approach to making tender, chewy, and lightly golden coconut treats. With just shredded coconut, sugar, and egg white, these macaroons come together quickly in 20 minutes, making them perfect for last-minute dessert cravings or holiday baking. Optionally dipped in dark chocolate, they balance sweetness with rich flavor in every bite.

Ingredients

Macaroons

  • 1 cup unsweetened shredded coconut
  • ½ cup granulated sugar
  • 1 large egg white (1.4 ounces / 40 grams)

Optional Chocolate Dip

  • ⅓ cup (70 grams) dark chocolate (70%), chopped

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix the Dough: In a bowl, combine 1 cup unsweetened shredded coconut, ½ cup granulated sugar, and 1 large egg white. Stir together with a spoon until the mixture is evenly moist and compact. Allow it to rest for 5 minutes so the coconut absorbs the egg white, making it easier to shape.
  3. Shape the Cookies: Take small amounts of the rested mixture and gently press them into small balls by closing your hand around the mixture. Avoid rolling them between your palms. You should form about 12 to 16 balls. If the mixture doesn’t hold together, gradually add a bit more egg white to help compact the dough, but be careful not to add too much to avoid spreading during baking.
  4. Bake the Macaroons: Place the shaped balls on the prepared baking sheet, spacing them apart. Bake in the preheated oven for 10 to 12 minutes, or until lightly golden on the tops and bottoms. Keep a close eye to avoid over-browning.
  5. Cool and Serve: Let the macaroons cool on the baking sheet for a few minutes. They will firm up and remain tender inside once cooled. Enjoy as is, or proceed to the optional chocolate dipping.
  6. Optional Chocolate Dip: Melt ⅓ cup chopped dark chocolate in the microwave using 20-second bursts, stirring well each time until smooth. Dip the bottom of each cooled macaroon into the melted chocolate, let excess drip off, and place back on parchment paper. Allow the chocolate to set at room temperature or refrigerate for 10 to 15 minutes to speed up the process.

Notes

  • Use fine, unsweetened shredded coconut for the best texture and binding.
  • Resting the mixture for 5 minutes is crucial to hydrate the coconut and make shaping easier.
  • Press the dough into balls gently instead of rolling to ensure the macaroons hold together well.
  • Watch the baking time carefully—macaroons should be light golden, never dark, and should bake quickly within 10-12 minutes.
  • Allow cookies to cool completely to firm up while keeping a tender interior.
  • Store macaroons in an airtight container at room temperature for up to 4 days.
  • Freeze leftovers for up to 2 months and thaw at room temperature before serving.
  • For a chocolate variation, dip cooled macaroons in melted dark chocolate and let set before serving.
  • Not recommended to substitute ingredients for best results.
