Ingredients

Bar Base

  • 1 1/4 cups (274g) mashed very ripe bananas
  • 2 1/2 cups (214g) quick oats
  • 2 tbsp (1fl oz/30ml) maple syrup, or more as needed to taste

Blueberry Layer

  • 1 1/4 cups (171g) fresh blueberries

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Line an 8×8 inch baking pan with parchment paper, leaving overhangs on the sides to help lift the bars out easily after baking.
  2. Mix Base Ingredients: In a large mixing bowl, combine mashed bananas, quick oats, and maple syrup. Mix thoroughly with a spatula until the mixture is evenly combined, thick, and moist but not runny. Adjust by adding more oats if too wet, or more mashed banana if too dry. Taste and add more maple syrup if desired.
  3. Press Bottom Layer: Divide the oat mixture in half. Press one half evenly into the bottom of the prepared baking pan using your hands. The layer will be thin but should cover the entire base.
  4. Prepare Blueberry Puree: Place the fresh blueberries into a small high-powered blender and blend until a thick, smooth liquid forms without large pieces. Pour this blueberry puree evenly over the pressed oat base layer, spreading gently with a spatula.
  5. Form Top Crust: On a sheet of parchment paper, shape the remaining oat mixture into a thin square matching the interior dimensions of your baking pan. Use a thin cookie spatula to carefully loosen and lift the oat crust pieces off the parchment. It’s normal for it to break; assemble the pieces gently on top of the blueberry layer, pressing lightly to close cracks without squeezing out the blueberry puree.
  6. Bake: Place the assembled bars in the oven and bake for about 30 minutes, or until the oat crust is golden brown and the surface looks dry and cooked.
