This 4-Ingredient Single-Serve Blueberry Cobbler is a delicious, easy-to-make dessert that’s both vegan and gluten-free. Featuring a luscious blueberry filling topped with a crumbly, sweet cobbler crust, it’s perfect for a quick treat prepared in just one ramekin. It’s naturally sweetened with pure maple syrup and uses wholesome ingredients like coconut oil and gluten-free flour, making it suitable for various dietary preferences.

Ingredients

Cobbler Topping:

  • ¼ cup gluten-free all-purpose flour
  • 1 Tbsp coconut oil, melted
  • 1 Tbsp pure maple syrup
  • Pinch sea salt

Blueberry Filling:

  • 1 cup fresh blueberries
  • 1 to 2 tsp pure maple syrup, to taste
  • 1 tsp coconut oil, melted
  • 1 tsp gluten-free all-purpose flour
  • Pinch sea salt

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the perfect temperature for baking the cobbler.
  2. Mix Blueberry Filling: In an 8-ounce oven-safe ramekin, combine fresh blueberries, gluten-free all-purpose flour, melted coconut oil, pure maple syrup, and a pinch of sea salt. Stir well to coat the blueberries evenly and help thicken the filling during baking.
  3. Prepare Cobbler Topping: In a small bowl or measuring cup, mix the gluten-free flour, melted coconut oil, pure maple syrup, and sea salt. Stir until a thick dough forms. The mixture can remain crumbly or be shaped into a biscuit-like topping.
  4. Assemble the Cobbler: Spoon the cobbler topping over the blueberry filling in the ramekin, spreading evenly or forming a biscuit shape if desired. Place the ramekin on a baking sheet to catch any bubbling juice that may overflow during baking.
  5. Bake: Bake the cobbler in the preheated oven for 25 to 28 minutes, until the topping is golden brown and the blueberry filling is bubbly and cooked through.
  6. Cool and Serve: Allow the cobbler to cool for at least 10 minutes. This cooling time lets the filling thicken and the ramekin to cool for safe handling. Serve as-is or with toppings like extra blueberries, vegan vanilla ice cream, whipped cream, or dairy-free yogurt for extra indulgence.

Notes

  • For a non-vegan version, replace the coconut oil in both the topping and the blueberry filling with 2 tablespoons of melted butter.
  • The ramekin size is important; an 8-ounce ramekin works perfectly for single servings.
  • You can adjust the amount of maple syrup in the filling to control sweetness according to your preference.
  • Serving the cobbler warm enhances the flavors and texture but can also be enjoyed at room temperature.
