Ingredients

Base Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 1 large (or 2 small-medium) yellow onion, peeled and sliced
  • 3 to 4 garlic cloves, minced
  • 1/4 to 1/2 tsp. crushed red pepper flakes (optional)
  • 1/2 tsp. kosher salt
  • 16 oz. fresh pizza dough, room temperature (or gluten free frozen pizza dough)

Toppings

  • 3/4 cup canned pumpkin puree
  • 5 oz. freshly grated gouda cheese (about 1 1/4 cups)
  • Optional: finely chopped fresh parsley for garnish

Instructions

  1. Caramelize Onions: Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 7 to 8 minutes until soft. Reduce heat to low and continue cooking, stirring every few minutes to prevent sticking and uneven coloring, until onions turn blonde in color, about 20 to 30 minutes. During the last 5 minutes, stir in minced garlic, kosher salt, and crushed red pepper flakes if using, allowing flavors to meld.
  2. Preheat Oven and Prepare Dough: Place an oven rack in the center-top position and preheat the oven to 475°F (245°C). Put a pizza stone or baking sheet on the rack to heat. On a flour-coated surface, sprinkle more flour on the pizza dough and stretch or roll it out into a 12 to 14 inch round. Transfer the dough to a piece of parchment paper and prick the surface a few times with a fork to prevent bubbling.
  3. Assemble Pizza: Evenly spread the pumpkin puree over the dough, leaving a 1/2-inch border around the edge. Scatter the caramelized onion and garlic mixture on top of the pumpkin layer, then generously sprinkle with freshly grated gouda cheese. Add chopped fresh parsley if desired for garnish.
  4. Bake Pizza: Slide the parchment paper with the assembled pizza onto the preheated pizza stone or baking sheet in the oven. Bake for approximately 12 minutes, or until the crust is crisp on the bottom and the gouda cheese has melted completely.
  5. Serve: Remove pizza from oven, let cool slightly, slice into 8 pieces, and serve warm. Garnish with additional parsley if preferred.

Notes

  • To Store: Store leftover pizza slices in an airtight container or place in a resealable gallon-size zip-top bag. Wrapping with plastic wrap followed by foil also works to maintain freshness. Refrigerate for up to 4 days.
  • To Reheat: Reheat pizza slices in a skillet over medium heat (cast iron recommended). Add 1 or 2 slices, cover, reduce heat to medium-low, and warm slowly to re-crisp the crust. Adding a few drops of water in the pan away from the pizza and covering helps steam-melt the cheese for a perfect reheat.
