This easy and simple cheese quesadilla recipe takes just 5 minutes to make and can be prepared on the stovetop or in an air fryer. Featuring a blend of cheddar and Monterey Jack cheeses melted inside a warm tortilla, this quick snack or light meal offers a deliciously crispy crust with gooey cheese inside, perfect for any time of day.

Ingredients

Cheese Quesadilla Ingredients

  • 1 8-inch tortilla
  • ¼ cup cheddar cheese, shredded
  • ¼ cup Monterey Jack cheese, shredded
  • ½ tablespoon butter

Instructions

  1. Prepare the skillet and butter: Place a skillet on the stovetop and heat it to medium. Add ½ tablespoon of butter and let it melt completely to coat the pan.
  2. Place and coat the tortilla: Lay the 8-inch tortilla onto the buttered skillet. Use a spatula to gently move the tortilla around so that the underside is evenly coated with melted butter.
  3. Add the cheese: Evenly sprinkle ¼ cup shredded cheddar and ¼ cup shredded Monterey Jack cheese over the tortilla surface. Allow the cheese to start melting.
  4. Fold the tortilla: Once the cheese begins to melt, use the spatula to carefully fold the tortilla in half, enclosing the cheese inside.
  5. Cook both sides: Cook the folded quesadilla for about 1 minute on each side. This ensures the cheese inside is fully melted and the tortilla exterior develops a golden-brown, crispy crust.
  6. Alternative air fryer method: Butter the outside of the tortilla with ½ tablespoon butter. Place the tortilla in the air fryer basket, sprinkle cheese on half of it (¼ cup cheddar and ¼ cup Monterey Jack), fold in half, and secure with a toothpick. Air fry at 350°F for 8 minutes, flipping halfway through, and monitor to prevent the tortilla from floating up.

Notes

  • Frozen: Assemble and cook cheese quesadillas, allow to cool, cut into triangles, and store in freezer-safe containers for up to 3 months. They can be cooked straight from frozen with extra time per side.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat on a pan over medium heat for 1 minute per side or until the cheese is melted.
  • Doubling the recipe: If making multiple quesadillas, reduce heat for the later batches to prevent the tortilla from browning too quickly before the cheese melts.
  • Air Frying tip: Use toothpicks to secure folded quesadillas or place a rack over them to keep the tortilla flat during air frying.
