Ingredients

Vegetables

  • 1 small cucumber, cubed
  • 1/2 cup cherry tomatoes, halved
  • small bunch of parsley, chopped
  • 1-2 spring onions, thinly chopped

Proteins & Grains

  • 1/3 cup chickpeas, canned, rinsed & drained
  • 2-3 tbsp quinoa, cooked

Dressing & Toppings

  • Olive oil, to taste
  • 7-8 olives
  • 1 tbsp tzatziki
  • 2 tbsp hummus
  • Black pepper, freshly ground, to taste
  • Salt, to taste
  • Vinegar, to taste

Instructions

  1. Prepare the salad: Wash all the vegetables thoroughly. Chop the cucumber into cubes, halve the cherry tomatoes, chop the parsley finely, and thinly slice the spring onions. Combine all these chopped vegetables in a mixing bowl.
  2. Season the salad: Drizzle the vegetables with olive oil and vinegar, then sprinkle salt to taste. Toss the salad gently to ensure all the veggies are lightly coated with the dressing and evenly seasoned.
  3. Assemble the Mediterranean bowl: In your serving bowl, layer the seasoned salad as the base. Add the rinsed and drained chickpeas, scatter the olives, and add the cooked quinoa on top or alongside. In the center or atop the bowl, place 2 tablespoons of hummus and 1 tablespoon of tzatziki for creamy contrast.
  4. Finish and serve: Sprinkle freshly ground black pepper over the bowl to finish. Your Mediterranean Bowl is now ready to enjoy immediately or pack for a quick meal prep lunch.

Notes

  • Use canned chickpeas for convenience, but rinsing is essential to reduce sodium and improve flavor.
  • Quinoa can be cooked in advance and stored in the fridge to speed up meal prep.
  • You can adjust the amount of hummus and tzatziki according to your preference.
  • Try adding a splash of lemon juice for extra zest.
  • This recipe is vegetarian and can be made vegan by substituting tzatziki with a vegan yogurt-based alternative.
