Crispy and flavorful Air Fryer Mahi Mahi fillets coated in a seasoned panko and parmesan crumb, perfectly cooked to golden perfection. This easy recipe brings a healthy twist to fish with minimal oil and quick cooking time, ideal for a light and delicious meal.

Ingredients

Fish

  • 1 ½ lb mahi mahi fillets, 4 pieces
  • 2 tablespoons olive oil

Breading Mixture

  • 1 ½ cup panko breadcrumbs
  • ½ cup parmesan cheese, grated
  • 1 teaspoon paprika
  • ½ teaspoon dried parsley
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Garnish & Serving

  • Chopped parsley, to garnish
  • Lemon wedges, to serve

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 390 degrees Fahrenheit to ensure it reaches the right temperature for crisp and even cooking of the fish fillets.
  2. Prepare the Mahi Mahi: Use a kitchen towel to pat the mahi mahi fillets completely dry, which helps the coating stick better and makes the crust crispy. Then, massage each fillet with olive oil evenly and set aside.
  3. Make the Bread Crumb Mixture: In a wide bowl, combine panko breadcrumbs, grated parmesan cheese, paprika, dried parsley, onion powder, garlic powder, salt, and black pepper. Mix well to distribute the spices thoroughly.
  4. Coat the Fillets: Place each mahi mahi fillet in the breadcrumb mixture and press to coat them evenly on both sides with the seasoned breading.
  5. Arrange in Air Fryer: Lightly grease the air fryer basket to prevent sticking and place the breaded fillets in a single layer with some space around each for hot air circulation.
  6. Air Fry the Fillets: Cook the coated fillets for a total of 10-12 minutes at 390°F, flipping them halfway through to ensure an even golden and crispy crust. The fish is done when it reaches an internal temperature of 145°F and flakes easily with a fork.
  7. Serve: Transfer the cooked fillets to a serving platter, garnish with chopped parsley, and serve immediately with fresh lemon wedges on the side for a bright, zesty finish.

Notes

  • Pat Dry Fillets: Ensuring the fillets are dry before seasoning improves crispiness by removing excess moisture.
  • Preheat the Air Fryer: Preheating helps cook the fish evenly and improves texture.
  • Avoid Overcrowding: Cook the fillets in a single layer with space around each to allow hot air circulation for even cooking and browning.
  • Don’t Over Cook: Fish is perfectly cooked when it reaches an internal temperature of 145°F and flakes easily to preserve moisture and flavor.
