Enjoy a delightful single-serving pumpkin coffee cake with a buttery brown-sugar streusel topping, perfectly baked in the air fryer in just 12 minutes. This easy recipe requires only one bowl and a ramekin, making it a fuss-free treat without the need for an oven.

Ingredients

Coffee Cake

  • 2 tablespoons unsalted butter, room temperature
  • 4 tablespoons granulated sugar
  • 4 tablespoons pumpkin purée
  • 1 teaspoon pure vanilla extract
  • ½ cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt (omit if using salted butter)
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Streusel Topping

  • 2 tablespoons unsalted butter, cold
  • 4 tablespoons all-purpose flour
  • 2 tablespoons brown sugar

Instructions

  1. Cream butter and sugar: In a small bowl, cream the softened butter and granulated sugar together until the mixture is pale and fluffy, ensuring a light texture for your cake base.
  2. Add pumpkin and vanilla: Stir in the pumpkin purée and pure vanilla extract until thoroughly combined, imparting moistness and flavor to the batter.
  3. Mix dry ingredients: Incorporate the flour, baking powder, salt, pumpkin pie spice, ground nutmeg, and ground cloves. Stir just until there are no dry spots; careful not to overmix to keep the cake tender.
  4. Prepare the ramekin: Grease a 10 to 12 ounce ramekin or oven-safe mug with cooking spray or butter, then scrape the batter into it, filling no more than two-thirds full to allow room for rising.
  5. Make streusel topping: In the same bowl, rub the cold butter into the flour and brown sugar until coarse, pea-sized crumbs form. Evenly scatter this streusel over the batter without pressing down to create a crumbly top.
  6. Air fry the cake: Place the ramekin into the air fryer basket and cook at 320°F for 10 to 12 minutes, checking at 8 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  7. Cool and serve: Allow the cake to cool for at least 5 minutes before enjoying to let the flavors set and topping crisp up.

Notes

  • Cooking time may vary depending on the thickness and type of your vessel; thicker stoneware mugs can take up to 14 minutes, while thinner ramekins may be done around 9 minutes.
  • If the streusel topping browns too quickly before the cake finishes cooking, tent the ramekin loosely with foil during the last few minutes.
  • Alternatively, you can bake this recipe in a conventional oven at 350°F for 18 to 22 minutes.
  • Leftover cake can be reheated in the air fryer at 300°F for 2 to 3 minutes to re-crisp the topping.
