This Air Fryer Stuffed Portobello Mushroom recipe is a delicious and easy way to enjoy hearty mushrooms filled with a creamy, cheesy mixture of spinach and marinated artichoke hearts. Perfect as a vegetarian appetizer or main dish, these stuffed mushrooms are cooked in the air fryer for a perfectly tender and flavorful bite with a golden cheese topping.

Ingredients

Mushrooms

  • 4 Medium Portobello Mushrooms
  • Oil for rubbing

Filling

  • 8 ounces Cream Cheese, softened
  • 1 Cup Shredded Mozzarella
  • 1 Cup Chopped Fresh Spinach
  • 1 Cup Chopped Marinated Artichoke Hearts
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper, to taste

Instructions

  1. Prepare Mushrooms: Wash the portobello mushrooms thoroughly and remove the stems. Rub the mushroom caps with a light coating of oil to prevent sticking during cooking.
  2. Pre-cook Mushrooms: Place the mushrooms open side down into the air fryer basket and air fry at 400ºF for 7 minutes. This step helps to release moisture from the mushrooms. Remove them and pat dry with paper towels to absorb any remaining liquid.
  3. Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded mozzarella, chopped fresh spinach, chopped marinated artichoke hearts, Italian seasoning, garlic powder, salt, and pepper. Mix until all ingredients are thoroughly combined.
  4. Stuff Mushrooms: Fill each mushroom cap generously with the cream cheese and vegetable mixture, ensuring an even distribution of filling among all mushrooms.
  5. Air Fry Stuffed Mushrooms: Place the stuffed mushrooms back into the air fryer basket. Top each with additional shredded mozzarella for a golden, crispy finish. Air fry at 370ºF for 5 to 7 minutes, or until the cheese is browned and the filling is heated through.
  6. Serve: Carefully remove the mushrooms from the air fryer and serve warm as a flavorful appetizer or main dish.

Notes

  • Patting the mushrooms dry after the initial air fry is essential to reduce sogginess in the final dish.
  • Use marinated artichoke hearts for added flavor; drain any excess liquid to avoid a watery filling.
  • Feel free to substitute mozzarella with other melty cheeses like provolone or fontina for variation.
  • To make this recipe vegan, use dairy-free cream cheese and cheese alternatives.
