Ambrosia Salad is a classic, creamy fruit salad featuring a luscious blend of whipped cream, sour cream, tropical fruits, shredded coconut, and mini marshmallows. This easy-to-make dessert salad is chilled to perfection and offers a delightful balance of sweet and tangy flavors, making it a popular treat for potlucks, holidays, or any festive gathering.

Ingredients

Dairy

  • ¾ cups (180 ml) heavy cream
  • ¼ cup (35 g) powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup (120 g) sour cream

Fruit & Mix-ins

  • 11 oz (312 g) can mandarin oranges, well drained
  • 10 oz (¾ cup) maraschino cherries, well drained and without stems
  • 1 8 oz can pineapple tidbits, well drained
  • 1 ½ cups (120 g) sweetened shredded coconut
  • 4 cups (200 g) mini marshmallows (rainbow/fruit flavored or classic white)

Instructions

  1. Whip Cream Mixture: Combine heavy cream, powdered sugar, and vanilla extract in a large bowl. Use an electric mixer to beat until the mixture is thick, billowy, and resembles the consistency of Cool Whip.
  2. Fold in Sour Cream: Use a spatula to gently fold sour cream into the whipped cream mixture until fully incorporated and smooth.
  3. Mix Fruits and Coconut: In a separate bowl, stir together the drained mandarin oranges, maraschino cherries, pineapple tidbits, shredded coconut, and mini marshmallows to evenly distribute all the ingredients.
  4. Combine All Ingredients: Add the whipped cream and sour cream blend to the fruit and marshmallow mixture. Stir gently until everything is completely combined, ensuring an even coating.
  5. Chill: Cover the bowl with plastic wrap or a lid and chill the salad in the refrigerator for at least 1 hour before serving. This allows the flavors to meld and the texture to firm up.

Notes

  • Marshmallows: Rainbow or fruit-flavored mini marshmallows offer a tropical twist, but classic white mini marshmallows work well too.
  • Adding Nuts: For added crunch, fold in ¾ cup of coarsely chopped nuts such as pecans or walnuts.
  • Storing: Prepare Ambrosia Salad 1 to 24 hours before serving for best flavor and texture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as it affects texture.
