A delightful and elegant dish featuring tender chicken breasts stuffed with sweet honeycrisp apples and creamy brie cheese, finished with a flavorful maple Dijon glaze. Perfect for a cozy dinner or special occasion.

Ingredients

For the Stuffed Chicken:

  • 2 chicken breasts, boneless & skinless
  • 1 honeycrisp apple, cored and sliced thin
  • 1 wedge of brie cheese, sliced (about 3-4 ounces)
  • Salt & pepper, to taste

For the Maple Glaze:

  • 2 Tbsp maple syrup
  • 1 tsp Dijon mustard
  • ¼ tsp dried thyme
  • 1 garlic clove, minced

Instructions

  1. Prepare the glaze: Whisk together the maple syrup, Dijon mustard, dried thyme, and minced garlic in a small bowl until well combined. Set aside.
  2. Preheat oven and prep chicken: Preheat your oven to 400 degrees F (200 degrees C). Place chicken breasts flat on a cutting board and cut a slit into each breast about ¾ of the way through to create a pocket. Season both sides with salt and pepper.
  3. Sear the chicken: Heat a large cast iron skillet over medium-high heat and add a splash of olive oil. Once hot, add the chicken breasts and sear for 2-3 minutes on each side until golden brown. Remove chicken from the skillet.
  4. Stuff the chicken: Carefully stuff each chicken breast pocket with the thinly sliced honeycrisp apple and slices of brie cheese. Secure with toothpicks if desired to keep the filling intact.
  5. Glaze and bake: Return the stuffed chicken breasts to the cast iron skillet and brush the maple glaze generously over the top. Transfer the skillet to the preheated oven and bake for 20-22 minutes, or until the internal temperature of the chicken reaches 165 degrees F (74 degrees C).
  6. Serve: Remove from the oven and serve immediately while warm. Remove toothpicks before eating if used.

Notes

  • If you don’t have a cast iron skillet, you can sear the chicken in any skillet and then transfer the breasts to a baking dish before brushing with glaze and baking.
  • Ensure the apple slices are thin to help them cook fully inside the chicken pocket.
  • The dish pairs well with roasted vegetables or a fresh green salad for a complete meal.
  • Use a meat thermometer to check doneness for perfectly cooked chicken.
