Ingredients

Meatloaf Muffins

  • 1 lb ground turkey
  • 1 apple, peeled and grated
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 small onion, finely diced
  • 1/2 tsp dried sage
  • Salt & pepper to taste

Maple-Mustard Glaze

  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup

Optional Side

  • Mashed sweet potatoes

Instructions

  1. Preheat and prepare muffin tin. Preheat your oven to 375°F (190°C). Grease a muffin tin thoroughly to prevent sticking.
  2. Mix ingredients. In a large bowl, combine the ground turkey, grated apple, breadcrumbs, egg, finely diced onion, dried sage, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
  3. Fill muffin cups. Divide the meat mixture evenly into 8 to 10 muffin cups, pressing the mixture lightly to form compact muffins.
  4. Prepare glaze. In a small bowl, whisk together the Dijon mustard and maple syrup until smooth.
  5. Apply glaze. Brush the maple-mustard glaze over the top of each meatloaf muffin to add a flavorful and glossy finish.
  6. Bake. Place the muffin tin in the preheated oven and bake for 25 to 30 minutes, or until the muffins are cooked through and golden brown on top.
  7. Rest and serve. Allow the meatloaf muffins to rest for 5 minutes after baking before serving. For a complete meal, serve alongside creamy mashed sweet potatoes.

Notes

  • Use fresh sage if available for a more vibrant flavor; reduce quantity to 1/4 tsp if using fresh leaves.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • Ensure the apple is peeled and finely grated so it blends well into the mixture and cooks evenly.
  • Breadcrumbs help bind the meatloaf muffins but can be substituted with oats or crushed crackers for variation.
  • Resting the muffins allows juices to redistribute, enhancing tenderness and flavor.
  • These meatloaf muffins can be made ahead and reheated for quick meals throughout the week.
