This Apple Crumble Chia Pudding is a delicious and nutritious plant-based breakfast or snack that combines creamy chia pudding with stewed apples and a crunchy nutty oat crumble. Infused with warming spices like cinnamon and cardamom and naturally sweetened with dates and maple syrup, this recipe is perfect for a wholesome and satisfying start to your day or a cozy treat.

Ingredients

Chia Pudding Base

  • 1/3 cup unsweetened plain plant-based yogurt
  • 3 tbsp apple butter
  • 1 medjool date
  • 1 tsp yellow miso paste (optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp kosher salt or more to taste
  • 3/4 cup soy milk
  • 1/3 cup chia seeds

Crumble Topping

  • 3 tbsp gluten-free rolled oats
  • 3 tbsp walnuts or pecans
  • 2 medjool dates
  • Pinch of salt

Stewed Apples

  • 2 apples, diced or thinly sliced
  • 2 tsp maple syrup
  • 1/4 tsp cinnamon
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Prepare the Pudding Mixture: Add the plant-based yogurt, apple butter, 1 medjool date, yellow miso paste (if using), vanilla extract, cinnamon, cardamom, kosher salt, and soy milk into a blender cup. Blend on high until the mixture is completely smooth and creamy.
  2. Mix in Chia Seeds: Pour the blended mixture over the chia seeds in a storage container or bowl. Whisk thoroughly to combine, then let sit for 5 minutes to allow the chia seeds to swell. Whisk again to break up clumps, cover, and refrigerate for at least one hour to thicken fully.
  3. Make the Crumble: Add the gluten-free oats, walnuts or pecans, 2 medjool dates, and a pinch of salt to a mini food processor. Pulse until the mixture becomes crumbly to your liking, creating a crunchy topping.
  4. Cook the Apples: Heat a sauté pan over medium-low heat. Add the diced apples, maple syrup, cinnamon, water, and a pinch of salt, stirring well to combine. Sauté for 3-4 minutes, adding small splashes of water as needed to prevent sticking, until the apples soften and most of the liquid evaporates.
  5. Assemble the Pudding: Divide the chia pudding evenly into 3 jars or serving dishes. Top each serving with the stewed apples and sprinkle with the oat-nut crumble (about 2 tablespoons per jar). Optionally, add a spoonful of extra apple butter and a drizzle of maple syrup before serving.

Notes

  • Save on dishes: Use an immersion blender in a tall glass jar to blend the pudding base. Then add chia seeds directly into the jar and whisk. Store the mixture in the same jar to avoid transferring and extra cleanup.
  • Prevent clumps: Let the chia pudding sit for 5 minutes after the first whisk, then whisk again to break up any clumps formed by swollen chia seeds.
  • Adjust consistency: For thinner pudding, add extra soy milk a little at a time while mixing until desired consistency is reached.
