Ingredients

Cabbage

  • 1 large head of green cabbage

Filling

  • 2 lbs ground turkey or ground chicken
  • 2 tablespoons freshly peeled and minced ginger
  • 4 fresh garlic cloves, minced or grated
  • 1 small onion, finely grated
  • Sea salt and freshly ground black pepper, to taste, about 1/4 teaspoon each
  • 1/4 cup coconut aminos, tamari, Bragg’s liquid aminos, or low sodium soy sauce
  • 2 tablespoons raw honey
  • 1/2 teaspoon chili flakes, or 1 red chili pepper, seeded and minced
  • 1 bunch green onions/scallions or fresh cilantro leaves, chopped and divided
  • Sesame seeds, for garnish

Instructions

  1. Prep the Cabbage: Fill half of a large stockpot with water and bring it to a boil. Carefully cut out the root end of the cabbage using a knife to loosen the leaves. Place the cabbage into the boiling water and parboil for 3-4 minutes to soften the leaves. Drain thoroughly and let it cool until you can handle it safely. Gently separate the leaves from the cabbage head.
  2. Make the Filling: In a large bowl, combine the ground turkey or chicken with minced ginger, garlic, grated onion, coconut aminos, raw honey, chili flakes, and half of the chopped green onions or cilantro. Season the mixture with sea salt and freshly ground black pepper. Mix thoroughly, preferably using your hands for an even blend.
  3. Assemble the Rolls: Place a cabbage leaf flat on a clean surface. Spoon about 1 tablespoon of the meat mixture near the stem end of the leaf. Fold in the sides and roll tightly from the root end to form a neat cabbage roll. Place each roll in a steamer basket as you go.
  4. Steam the Rolls: Bring water to a boil in the same stockpot used earlier. Place the steamer basket with the cabbage rolls over the boiling water. Cover and steam for 15-18 minutes until the meat is fully cooked through and the cabbage is tender.
  5. Serve: Garnish the cooked cabbage rolls with the remaining chopped green onions or cilantro and sprinkle with sesame seeds. Serve warm with a side of coconut aminos or your favorite dipping sauce for added flavor. Enjoy your healthy and delicious Asian inspired cabbage rolls!

Notes

  • For a spicier kick, add more chili flakes or include sliced fresh chili in the filling.
  • Ground chicken can be substituted with ground pork or beef for different flavor profiles.
  • Be careful not to overboil the cabbage leaves to prevent them from becoming too soft and tearing during rolling.
  • These rolls can be steamed ahead of time and reheated gently in the steamer or microwave.
  • For a vegetarian version, substitute ground meat with finely chopped mushrooms, tofu, or lentils and season accordingly.
