This creamy avocado key lime pie in a jar offers all the zesty flavor of key lime pie without any dairy. Perfectly paleo and vegan-friendly, this no-bake dessert comes together quickly using wholesome ingredients like ripe avocados, fresh lime juice, and naturally sweet dates. Served in convenient individual jars, it’s an ideal refreshing treat that’s both indulgent and healthful.

Ingredients

For the Crust

  • 1/2 cup shredded, unsweetened coconut
  • 1/4 cup raw pecans
  • 1/3 cup Medjool dates, pitted and halved (about 3 to 4)
  • 1/8 tsp kosher salt

For the Filling

  • 2 large ripe avocados (not browned)
  • 1/4 cup lime juice
  • Zest from 1/2 lime (for garnish)
  • 2 1/2 tbsp raw honey or other liquid sweetener
  • 2 tbsp coconut butter
  • 1/8 tsp kosher salt

Instructions

  1. Prepare the crust: In a food processor or blender, pulse the shredded coconut, raw pecans, pitted dates, and kosher salt until the mixture holds together when pressed. Divide this crust mixture evenly among the serving jars, pressing lightly to form a compact base. Set the jars aside.
  2. Make the filling: Wipe out the food processor or blender bowl, then add the ripe avocados, lime juice, raw honey, coconut butter, and kosher salt. Blend on high speed until the mixture is very smooth and creamy, with no lumps remaining.
  3. Assemble the pie jars: Spoon or pipe the creamy avocado lime filling on top of the crust layer in each jar, smoothing the surface.
  4. Chill: Place the filled jars in the refrigerator to chill and set for at least 1 hour. This helps the flavors meld and the texture firm up slightly for the best eating experience.
  5. Serve: When ready to enjoy, optionally add a dollop of coconut whipped cream on top and garnish with lime zest and thin lime slices for a fresh, decorative touch.

Notes

  • Use ripe avocados that are soft but not browned for the smoothest and creamiest filling.
  • If you don’t have coconut butter, gently melt solid coconut oil as a substitute, but coconut butter adds extra richness.
  • Medjool dates provide natural sweetness and stickiness to bind the crust; ensure they are soft for easier processing.
  • This dessert is best served within 2 days of preparation for optimal freshness.
  • For a completely raw version, use raw honey or a raw maple syrup as the sweetener.
  • To make it fully keto-friendly, substitute honey with a keto-approved liquid sweetener like erythritol or monk fruit syrup.
