Ingredients

Avocado Smoked Salmon Salad

  • 8 cups mixed greens (such as spring mix)
  • 2 medium ripe avocados, pit removed and diced into 1-inch cubes
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, ends trimmed, halved lengthwise and thinly sliced into half-moons
  • 6 oz smoked salmon, thinly sliced
  • 1/3 cup crumbled feta cheese

Dijon Honey Vinaigrette

  • 1/4 cup lemon juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • 2 tablespoons minced fresh dill
  • Salt and pepper to taste

Optional Garnish

  • Pomegranate seeds
  • Additional fresh dill

Instructions

  1. Assemble Salad: In a large salad bowl, combine the mixed greens, diced avocado, halved cherry tomatoes, sliced cucumber, smoked salmon, and crumbled feta cheese. Toss gently to mix the ingredients evenly and set aside while you prepare the dressing.
  2. Prepare Dijon Honey Vinaigrette: In a medium bowl, whisk together lemon juice, honey, and Dijon mustard until the mixture is smooth. Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing. Stir in the minced fresh dill, and season with salt and pepper to taste. Refrigerate the dressing until ready to use.
  3. Dress and Serve: Just before serving, drizzle the prepared Dijon honey vinaigrette over the salad. Toss gently to ensure all the ingredients are evenly coated with the dressing. Garnish with pomegranate seeds and additional fresh dill for extra color and flavor if desired. Serve immediately and enjoy this vibrant, flavorful salad.

Notes

  • Use ripe but firm avocados to avoid mushy texture.
  • For an extra burst of sweetness and color, add pomegranate seeds as garnish.
  • Make the vinaigrette ahead of time and refrigerate; whisk again before using.
  • Substitute feta cheese with goat cheese for a creamier texture.
  • This salad is best served fresh to maintain avocado texture and vibrant greens.
