Ingredients

Vegetables and Aromatics

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves minced garlic
  • 1 cup chopped baby spinach

Dairy

  • 8 ounces feta cheese
  • 4 large eggs

Oils and Spices

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes

Optional Garnishes

  • Chopped fresh basil or fresh chives

Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it’s at the perfect temperature for baking the vegetables and eggs.
  2. Prepare the Baking Dishes: If using ramekins or individual oven-safe dishes, divide the cherry tomatoes, diced bell pepper, red onion, minced garlic, and feta cheese evenly among 4 dishes. Drizzle one tablespoon of olive oil over each. If using one large baking dish (8×8 or 9×11), combine the tomatoes, bell pepper, onion, and garlic in the dish, then place the feta cheese in the center. Drizzle all the olive oil over the mixture.
  3. Mix the Spices: In a small bowl, combine dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes, stirring well to blend the flavors.
  4. Season the Dish: Sprinkle the mixed spices evenly over the feta and vegetable mixture. If using individual dishes, divide the spice mixture equally among them.
  5. Bake the Vegetables and Feta: Place the dishes on a baking sheet (if using ramekins) or directly into the oven if using one large dish. Bake for 25 minutes, allowing the vegetables to soften and the feta to warm through.
  6. Incorporate the Spinach: Remove the dishes from the oven and stir the contents to distribute the baked feta evenly with the vegetables. Add the chopped baby spinach and stir it gently until well combined and slightly wilted.
  7. Add the Eggs: Create a small well in the center of each individual dish or four wells in the large baking dish. Carefully crack an egg into each well.
  8. Finish Baking: Return the dishes to the oven and bake for an additional 10 minutes, or until the eggs are cooked to your liking.
  9. Add Garnish and Serve: Top with optional chopped fresh basil or chives for a fresh finish. Serve warm with crusty baguette, toast, or pita bread for dipping.

Notes

  • Use ramekins that hold at least 10 ounces or more to allow enough space for ingredients and eggs.
  • If using one large baking dish, an 8×8 or 9×11 inch pan works best to ensure even cooking.
  • Adjust the red pepper flakes to control the spiciness according to your preference.
  • Serve immediately after baking for the best texture and flavor.
