The dish bakes the feta and cherry tomatoes to create a luscious sauce that pairs perfectly with tender pieces of salmon and pasta, all seasoned with garlic and olive oil for an easy yet impressive dinner.

Ingredients

Salmon

  • 8 oz cooked salmon
  • Salt, to taste
  • Black pepper, to taste
  • Za’atar seasoning (or preferred seasoning blend), to taste

Pasta and Sauce

  • 1 pound cooked pasta
  • 1 block feta cheese (approximately 8 oz)
  • 1 (10 oz) container cherry tomatoes
  • 3 cloves garlic, minced
  • Olive oil, for drizzling
  • Seasoning (salt and pepper), to taste

Instructions

  1. Prepare the Salmon: Season the salmon with salt, pepper, and your preferred seasoning blend, such as Za’atar. Preheat the oven to 400°F (205°C). Place salmon in a baking pan and bake for 25 minutes or until the salmon flakes easily with a fork.
  2. Bake the Feta and Cherry Tomatoes: In a separate baking dish, place the cherry tomatoes and a block of feta cheese in the center. Add minced garlic and season with salt and pepper. Drizzle olive oil over the top. Bake at 400°F (205°C) alongside the salmon for 25 minutes until the tomatoes burst and feta softens.
  3. Make the Sauce: Remove the feta and tomato mixture from the oven and mash the tomatoes and feta together with a fork or potato masher until you achieve a creamy, uniform sauce.
  4. Combine Pasta and Sauce: Add the cooked pasta to the baking dish with the feta-tomato sauce and mix well to coat all the pasta evenly.
  5. Add Salmon: Remove the cooked salmon from its baking pan, break it into pieces, and gently fold it into the pasta and sauce mixture.
  6. Serve: Serve the baked feta pasta with salmon warm, optionally garnished with extra herbs or seasoning as desired.

Notes

  • Mix in additional vegetables such as broccoli, zucchini, or spinach for extra nutrition and flavor.
  • If fresh cherry tomatoes are unavailable, substitute with diced canned tomatoes.
  • If you cannot find a block of feta cheese, crumbled feta cheese can be used, though the texture of the sauce may vary slightly.
