Ingredients

Potatoes

  • 2 large baking potatoes

Cheese & Dairy

  • 1 200 g block of feta

Herbs & Spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chilli flakes

Fresh Produce

  • 1 head of garlic, top cut off
  • 1 lemon, halved
  • ¼ cup (20g) fresh basil, shredded

Oils & Sweeteners

  • 2 tablespoons olive oil
  • 1 tablespoon honey

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F) to prepare for roasting the potatoes and garlic.
  2. Prepare Potatoes: Wash and cube the potatoes. Place them in a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6-8 minutes (no longer than 10), then drain and steam dry for 2-3 minutes to remove excess moisture.
  3. Season Potatoes: Transfer the potatoes to a baking dish and add dried thyme, oregano, salt, black pepper, and 2 tablespoons olive oil. Stir well to coat the potatoes evenly with the seasonings and oil.
  4. Roast Garlic: Drizzle the garlic head with a little olive oil, wrap it in foil, and add it to the baking dish alongside the potatoes.
  5. Roast Potatoes and Garlic: Roast the potatoes and garlic in the preheated oven for 30-40 minutes until the potatoes are golden, crispy, and nearly cooked through.
  6. Add Feta and Lemon: Remove the baking dish from the oven and take out the garlic. Place the feta block in the center of the dish, optionally dipping one side in seasonings before flipping it over. Squeeze the juice of half the lemon over the feta and potatoes.
  7. Bake with Feta: Return the dish to the oven and bake for an additional 15 minutes until the feta softens and starts to brown slightly.
  8. Prepare Garlic Paste: Once the garlic is cool enough to handle, squeeze the roasted garlic cloves out of their skins and mash them with the flat of a knife to create a smooth paste.
  9. Combine Ingredients: Stir the mashed roasted garlic and juice from the remaining half of the lemon into the potatoes along with the fresh basil. Gently mix the roasted potatoes with the baked feta to combine flavors.
  10. Finish and Serve: Drizzle honey over the potatoes, sprinkle with shredded basil and red chili flakes for heat, then serve warm and enjoy this flavorful dish.

Notes

  • Par-boiling the potatoes before roasting ensures they cook evenly and become tender inside.
  • Adjust the amount of chili flakes according to your heat preference.
  • For a milder garlic flavor, use only 1-2 teaspoons of the mashed roasted garlic instead of the whole head.
  • This dish pairs well with a fresh green salad or grilled vegetables.
  • Leftovers can be refrigerated and gently reheated in the oven to preserve texture.
