A flavorful and comforting Gluten-Free Baked Honey Garlic Chicken Noodles dish combining tender chicken, mixed vegetables, and gluten-free spaghetti in a sweet and savory honey garlic sauce. This easy-to-make baked casserole is perfect for a hearty family meal.

Ingredients

Main Ingredients

  • 8 oz gluten-free spaghetti (Jovial brown rice spaghetti recommended)
  • 1 lb chicken breast, cubed
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (shredded carrots and peas)
  • 2 tbsp green onion, chopped (for garnish)

Sauce Ingredients

  • 2 cups chicken broth
  • 1 cup coconut aminos
  • 2 tsp rice vinegar
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tbsp honey

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Grease a 9×13 inch baking dish well using avocado oil spray to prevent sticking.
  2. Assemble Ingredients in Baking Dish: Add the uncooked gluten-free spaghetti carefully to the baking dish without breaking the strands. Top it evenly with the cubed raw chicken breast and season with salt and pepper. Scatter the mixed vegetables over the top.
  3. Add Sauce and Mix Lightly: Pour in the chicken broth, coconut aminos, rice vinegar, minced garlic, grated ginger, and honey directly into the baking dish. Lightly mix the ingredients together to combine without breaking the pasta.
  4. First Baking Period: Cover the dish tightly and bake in the preheated oven for 15 minutes to begin cooking the chicken and pasta.
  5. Stir and Continue Baking: Remove the dish from the oven and carefully stir to prevent pasta sticking, then re-cover and bake another 15 minutes.
  6. Final Stir and Bake: Take the dish out again, toss and rotate the noodles to ensure even cooking, cover, and bake for 10 more minutes.
  7. Uncover and Crisp: Remove the cover and check the noodle doneness. Bake uncovered for an additional 5 minutes to crisp up the chicken and vegetables. Verify chicken reaches an internal temperature of 165°F (74°C) for safety.
  8. Finish and Serve: Take the dish out and mix thoroughly to fully combine and allow the sauce to thicken as the pasta releases starch. Garnish with chopped green onion and serve fresh.

Notes

  • Stirring the pasta well after baking is essential to activate the pasta starch for thickening the sauce.
  • If the sauce is too thin, mix 1 teaspoon chicken broth with 1 teaspoon arrowroot starch and stir into the pasta to thicken further.
  • Ensure the chicken is fully cooked to an internal temperature of 165°F for food safety.
  • Use gluten-free spaghetti brands like Jovial to maintain gluten-free status.
