This vibrant baked salmon dish combines succulent fresh salmon with burst cherry tomatoes and sweet bell peppers, all infused with garlic, shallots, and fresh basil. It’s a simple yet flavorful meal that’s perfect for a wholesome weeknight dinner or special occasion, providing a delightful balance of protein and fresh vegetables.

Ingredients

Vegetables

  • 12 ounces vine-ripened cherry tomatoes (340 grams)
  • 2 medium bell peppers, cored and chopped into 1-inch pieces (orange, red, or yellow)
  • 1 large shallot, peeled and chopped
  • 2 large cloves garlic, minced

Fish

  • 1.5 pounds fresh salmon (680 grams)

Other

  • 2 Tbsp olive oil (divided)
  • 1/2 a lemon, juiced
  • Large handful fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) to prepare for roasting the salmon and vegetables.
  2. Prepare vegetables: In a large baking or casserole dish, combine whole cherry tomatoes, chopped bell peppers, chopped shallot, and minced garlic. Add half of the olive oil, season with salt and pepper, and toss everything together so the vegetables are evenly coated.
  3. Arrange salmon: Create a space in the middle of the vegetable mixture to place the salmon fillet. Brush the remaining olive oil over the salmon, then season it with salt and pepper. Pour lemon juice evenly over the entire dish to add brightness and enhance flavors.
  4. Bake: Place the baking dish in the preheated oven and bake for about 25 minutes, or until the salmon is cooked through but still tender and moist. During this time, the cherry tomatoes will burst, and the bell peppers will become soft and flavorful.
  5. Garnish and serve: Remove the dish from the oven and sprinkle fresh chopped basil over the top. Serve the baked salmon and vegetables on their own or over grains like quinoa or pasta, making sure to spoon the flavorful juices as a light sauce over your serving.

Notes

  • TIP: Choose vine-ripened or locally-grown cherry tomatoes for the best flavor and sweetness.
  • LEFTOVERS: Store any leftovers in an airtight container in the refrigerator for up to 3 days to maintain freshness.
