Delicious and healthy baked tuna meatballs featuring tender tuna combined with fresh spinach, herbs, and almond flour, baked to a perfect golden brown. These meatballs make for a flavorful, protein-packed dish that’s easy to prepare and great for a quick lunch or dinner.

Ingredients

Vegetables and Herbs

  • 1/2 medium onion, finely diced
  • 2 cups baby spinach, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill

Main Ingredients

  • 3 (5-ounce) cans tuna, drained, or 1 pound cooked tuna
  • 1/4 cup almond flour
  • 2 beaten eggs
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Sauté Aromatics and Spinach: Heat the olive oil in a pan over medium heat. Add the finely diced onion and minced garlic, sautéing for about one minute until fragrant. Then add the chopped baby spinach and continue to sauté for 1-2 minutes, or until the spinach is wilted.
  2. Cool Vegetable Mixture: Transfer the sautéed onion and spinach mixture to a bowl and allow it to cool completely. To speed up cooling, you can place the bowl in the refrigerator.
  3. Preheat Oven: While the vegetable mixture cools, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  4. Combine Ingredients: Drain the canned tuna and add it to a large mixing bowl along with the cooled vegetable mixture. Add almond flour, beaten eggs, mayonnaise, lemon juice, chopped parsley, dill, and salt and pepper to taste.
  5. Mix Thoroughly: Using your hands, mix all ingredients together thoroughly, breaking up any large chunks of tuna. Ensure the mixture is evenly combined and sticky enough to hold its shape.
  6. Form Meatballs: Using a medium cookie scoop or spoon, scoop even portions of the mixture and use your fingers to shape each scoop into a round meatball. Place the formed meatballs onto a baking tray lined with parchment paper.
  7. Bake: Bake the tuna meatballs in the preheated oven for 20 to 25 minutes, or until they turn lightly golden brown on the outside.

Notes

  • You can substitute almond flour with breadcrumbs if not following a low-carb diet.
  • These meatballs can be served with a dipping sauce or over a bed of salad or pasta.
  • Ensure the mixture is finely combined to help the meatballs hold their shape better during baking.
  • Leftover meatballs can be stored in the refrigerator for up to 3 days and reheated before serving.
