Ingredients

Dry Ingredients

  • 2 1/4 cups rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup mashed banana (about 2 large or 3 medium bananas)
  • 2 eggs
  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts
  • Chocolate chips (quantity to taste)
  • Banana coins (sliced bananas to taste)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking pan with nonstick spray and optionally line the bottom with parchment paper to prevent sticking and ease removal of the baked oatmeal.
  2. Mix Dry Ingredients: In a small bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir these together until evenly mixed.
  3. Mash Bananas: In a large bowl, mash the bananas thoroughly until smooth and free of lumps to ensure a uniform texture in the baked oatmeal.
  4. Add Wet Ingredients: Whisk the eggs into the mashed bananas until well blended. Then stir in the almond milk, maple syrup, and vanilla extract until fully combined.
  5. Combine Wet and Dry: Add the dry oat mixture to the wet banana mixture and stir gently until everything is just combined, ensuring the oats are evenly distributed.
  6. Add Optional Ingredients: If using, fold in the chopped walnuts, chocolate chips, and/or banana coins evenly into the batter to add texture and extra flavor.
  7. Bake: Pour the mixture into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the center is set.
  8. Cool and Serve: Allow the baked oatmeal to cool in the pan before cutting into squares. Serve warm or at room temperature as a delicious breakfast or snack.
