These Banana Bread Donuts offer a moist, flavorful twist on classic banana bread in a fun, easy-to-eat donut form. Made with ripe mashed bananas, natural sweeteners like maple syrup or honey, and simple pantry ingredients, they bake quickly to a soft, tender texture perfect for breakfast or a wholesome snack. Whether you use white, spelt, oat, or gluten-free flour, these donuts provide a delightful and healthier alternative to traditional sugary treats.

Ingredients

Wet Ingredients

  • 2/3 cup mashed banana
  • 3 tbsp pure maple syrup or honey
  • 2 tbsp oil or water
  • 1/2 tsp pure vanilla extract (optional)

Dry Ingredients

  • 1 cup flour (white, spelt, oat, or gluten-free all-purpose flour)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare wet ingredients: In a large bowl, whisk together the mashed banana, maple syrup or honey, oil or water, and vanilla extract if using, until well combined and smooth.
  2. Preheat and grease pan: Preheat your oven to 350°F (175°C). Grease a donut pan or a mini muffin tin thoroughly to prevent sticking.
  3. Mix dry ingredients: In a separate bowl, stir together the flour, baking powder, and salt thoroughly to ensure even distribution of leavening.
  4. Combine wet and dry: Gradually add the dry ingredients into the wet ingredients, stirring gently until a uniform donut batter forms. Avoid overmixing to keep the donuts tender.
  5. Fill and bake: Spoon or pipe the batter evenly into the prepared donut pan or muffin tin, smoothing the tops. Bake in the preheated oven for about 8 minutes, or until the donuts have risen and a toothpick inserted in the center comes out mostly clean.
  6. Cool and remove: Allow the donuts to cool in the pan for a few minutes before carefully popping them out. Serve plain or with your choice of icing, such as cinnamon cream cheese frosting for extra flavor.

Notes

  • Flour options include white, spelt, oat, or gluten-free all-purpose flour; almond or whole wheat flour are not recommended.
  • If using oat flour, ensure it’s finely ground for best texture.
  • The donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • For a dairy-free version, use water or plant-based oil and check frosting ingredients accordingly.
  • Adjust the sweetness by varying the amount of maple syrup or honey to taste.
