Ingredients

Chicken and Rice Mixture

  • 1½ pounds chicken breast, diced into 1 inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 1 cup jasmine rice
  • 1½ cups chicken broth, heated
  • 12 ounces frozen peas and carrots, thawed

Bang Bang Sauce

  • ½ cup mayonnaise
  • ½ cup sweet chili sauce
  • 1 tablespoon sriracha or other hot sauce
  • 1 tablespoon lime juice

Garnish (optional)

  • Sliced green onions

Instructions

  1. Preheat Oven: Preheat your oven to 375˚F (190˚C) to prepare for baking the dish.
  2. Make Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined. Set aside.
  3. Season Chicken: Place the diced chicken breast in a 9×13-inch baking dish. Sprinkle garlic powder, onion powder, paprika, and salt over the chicken. Drizzle with toasted sesame oil. Use a spoon or your hands to thoroughly mix and coat the chicken evenly with the seasoning.
  4. Assemble Dish: Evenly spread the seasoned chicken across the bottom of the baking dish. Layer the jasmine rice and thawed peas and carrots evenly over the chicken. Drizzle half of the prepared bang bang sauce over the rice and vegetables. Pour the hot chicken broth evenly over the entire dish to help cook the rice.
  5. Optional Foil Cover: You may cover the dish with foil to help steam the rice, but note this will increase the baking time by 20-30 minutes. The recipe is designed to be baked uncovered for best texture.
  6. Bake: Bake uncovered in the preheated oven for 40-50 minutes, or until the rice is tender and the liquid has been absorbed completely.
  7. Finish and Serve: Once baked, drizzle the remaining bang bang sauce over the top and garnish with sliced green onions if desired. Serve warm.

Notes

  • Do not cover the dish with foil for standard bake time; covering prolongs cooking by 20-30% to achieve similar tenderness.
  • Substitutions: Use chicken thighs or shrimp instead of chicken breast for a different protein twist.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days.
  • Freezing: Freeze cooled portions in freezer-safe containers or bags for up to 3 months.
  • Reheating: Microwave or warm covered in the oven at 350°F until heated through.
  • Scaling: Double the recipe for a larger casserole dish or halve it for smaller portions using an 8×8-inch pan, adjusting bake time as needed.
