Perfect for a quick, satisfying meal that balances savory and sweet flavors.

Ingredients

BBQ Chicken

  • 1 lb chicken tenders
  • ½ cup BBQ sauce (use your favorite!)
  • 2 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp cooking oil

Salad

  • 8 cups green leaf lettuce, rinsed and roughly chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 2 cups mango, cubed
  • 1 cup cheddar cheese, shredded
  • 1 cup carrots, shredded
  • ¼ cup ranch dressing (more if needed)
  • ¼ cup BBQ sauce (more if needed)

Instructions

  1. Marinate the Chicken: In a medium bowl, toss the chicken tenders with BBQ sauce, paprika, salt, and black pepper until all pieces are well coated.
  2. Cook the Chicken: Heat a skillet over medium heat and add the cooking oil. Once the oil is hot, add the chicken tenders. Cook them for about 5-7 minutes per side or until the internal temperature reaches 165℉, flipping halfway through cooking to ensure even grilling.
  3. Prepare the Chicken for Salad: Remove the chicken from the skillet and let it cool slightly. Then chop the chicken into bite-sized pieces for easy eating.
  4. Assemble the Salad: In a large bowl, combine the green leaf lettuce, cherry tomatoes, corn kernels, mango cubes, shredded cheddar cheese, shredded carrots, and chopped chicken pieces.
  5. Dress the Salad: Drizzle the salad with ranch dressing and additional BBQ sauce as desired. Toss gently to distribute the dressing evenly over all ingredients.
  6. Serve: Plate the salad and serve immediately for the best taste and freshness. Enjoy your delicious BBQ Chicken Salad!

Notes

  • You can substitute chicken tenders with chicken breasts cut into strips if preferred.
  • Adjust the amount of BBQ sauce and ranch dressing to your taste for more or less sauciness.
  • For a spicier twist, add a pinch of cayenne pepper to the marinade.
  • This salad works well as a meal prep option; keep dressings separate until serving to maintain freshness.
  • Grilling the chicken instead of cooking in a skillet can add a smokier flavor.
