  • 500 g (1.1 lb) Beef mince
  • 1 Onion, finely chopped
  • 2 Cloves garlic, peeled and crushed
  • 1 tbsp Fresh ginger, grated
  • 2 Peppers (bell peppers), any colours preferred
  • 1 tbsp Chinese five spice
  • 500 g (1.1 lb) Microwave rice (2 packs)
  • 200 g (7 oz) Frozen peas

Sauce

  • 3 tbsp Dark soy sauce
  • 3 tbsp Oyster sauce
  • 1/4 tsp Dried chilli flakes

To Serve (Optional)

  • Spring onions (scallions), sliced

Instructions

  1. Heat Oil and Cook Beef: Heat 1 teaspoon of sunflower oil in a heavy-bottomed frying pan or wok over medium heat. Add 500 grams of beef mince and cook over high heat for 5 to 10 minutes until browned evenly, stirring to break up any lumps.
  2. Add Aromatics and Peppers: Stir in 1 finely chopped onion, 2 crushed garlic cloves, 1 tablespoon fresh grated ginger, 2 sliced bell peppers, and 1 tablespoon Chinese five spice powder. Continue cooking and stirring for about 5 minutes until the onion softens and the mixture is fragrant.
  3. Prepare the Sauce: While the beef and vegetables cook, mix together the sauce ingredients: 3 tablespoons dark soy sauce, 3 tablespoons oyster sauce, and 1/4 teaspoon dried chilli flakes in a small bowl. Set aside.
  4. Add Rice and Peas: Add 500 grams of microwave rice to the pan, using a spoon or clean hands to break up any clumps. Then, add 200 grams frozen peas.
  5. Combine with Sauce and Heat Through: Pour the prepared sauce over the rice and beef mixture. Stir well to coat all ingredients evenly. Cook for an additional 5 to 10 minutes, stirring frequently, until everything is heated through and flavors meld.
  6. Serve: Optionally garnish with sliced spring onions (scallions) before serving for a fresh, mild onion flavor.
