A hearty and comforting Beef Goulash slow-cooked to tender perfection with rich paprika-infused tomato sauce and sweet red peppers, perfect for a cozy meal.

Ingredients

Slow Cook Ingredients

  • 700 g (1.5 lb) Diced beef
  • 1 Onion, peeled and chopped
  • 4 Cloves garlic, peeled and crushed
  • 400 g (14.5 oz) Tinned tomatoes
  • 2 tbsp Tomato puree
  • 2 Beef stock cubes (no need to dilute)
  • 1 tbsp Paprika
  • 2 tbsp Sweet smoked paprika
  • Salt and freshly ground black pepper, to taste

To Finish

  • 2 Red peppers, deseeded and thinly sliced

Instructions

  1. Prepare Slow Cooker: Place the diced beef, chopped onion, crushed garlic, tinned tomatoes, tomato puree, beef stock cubes, paprika, sweet smoked paprika, salt, and freshly ground black pepper into the slow cooker.
  2. Cook Beef Mixture: Cook on HIGH for 4-5 hours or LOW for 6-8 hours until beef is tender and flavors meld together.
  3. Add Red Peppers: Add the thinly sliced red peppers to the slow cooker and continue cooking on HIGH for 45-60 minutes to soften the peppers without overcooking.
  4. Check and Serve: Stir the goulash before serving. Adjust seasoning with salt and pepper if needed. Serve hot with mashed potatoes, rice, cooked orzo, or crusty bread.
  5. Optional Oven Method: Alternatively, place all ingredients into a lidded ovenproof pan and cook in the oven at 160℃ fan/180℃/Gas Mark 4/320°F for 1.5-2.5 hours, stirring after one hour and adding a splash of water if sauce seems dry. Add peppers during last 45-60 minutes of cooking.

Notes

  • Beef: Typically use casserole beef or stewing steak; browning is not necessary for this recipe.
  • Caraway Seeds: Optional – add 1 teaspoon to the slow cooker for extra flavor if available.
  • Adding Peppers: Adding peppers near the end prevents them from becoming too soft; alternatively, cook peppers briefly in the microwave and add just before serving for a fresher texture.
  • Toppings: Sour cream and fresh chopped parsley complement the dish well.
  • Serving Suggestions: Serve with mashed potatoes, rice, cooked orzo, or crusty bread to soak up the rich sauce.
