This hearty Beef Goulash recipe combines tender chunks of beef, vibrant red peppers, and a rich tomato-based sauce infused with smoky paprika and garlic. Designed for slow cooking or oven baking, it produces a comforting stew perfect for a warming meal, served best with mashed potatoes, rice, or crusty bread.

Ingredients

Slow Cook Ingredients

  • 700 g (1.5 lb) Diced beef
  • 1 Onion, peeled and chopped
  • 4 Cloves garlic, peeled and crushed
  • 400 g (14.5 oz) Tinned tomatoes
  • 2 tbsp Tomato puree
  • 2 Beef stock cubes (no need to dilute)
  • 1 tbsp Paprika
  • 2 tbsp Sweet smoked paprika
  • Salt and freshly ground black pepper, to taste

To Finish

  • 2 Red peppers, deseeded and thinly sliced

Instructions

  1. Prepare the Slow Cooker: Place all the slow cook ingredients including diced beef, chopped onion, crushed garlic, tinned tomatoes, tomato puree, beef stock cubes, paprika, sweet smoked paprika, salt, and freshly ground black pepper into the slow cooker.
  2. Slow Cook Beef: Cook the mixture on HIGH for 4-5 hours or on LOW for 6-8 hours, allowing the beef to become tender and the flavors to meld.
  3. Add Red Peppers: Add the sliced red peppers to the slow cooker and continue cooking on HIGH for an additional 45-60 minutes, ensuring the peppers retain some texture without being overcooked.
  4. Oven Cooking Alternative: For oven cooking, combine all ingredients in a lidded ovenproof pan and cook at 160℃ fan/180℃/Gas Mark 4/320℉ for 1.5 to 2.5 hours depending on beef cube size. Stir and check after one hour, adding a splash of water if the sauce appears dry.
  5. Serve: Garnish with sour cream and fresh chopped parsley if desired. Serve with mashed potatoes, rice, cooked orzo, or crusty bread for a complete meal.

Notes

  • Use casserole beef or stewing steak commonly found in supermarkets; no browning is necessary.
  • If available, add 1 teaspoon caraway seeds into the slow cooker for added flavor.
  • Adding peppers near the end of cooking preserves their texture. Alternatively, add them at the start for softer peppers or microwave briefly and add fresh right before serving.
  • Garnish with sour cream and chopped parsley for enhanced taste and presentation.
  • Serving suggestions include mashed potatoes, rice, orzo, or crusty bread to complement the stew.
