Perfect for a satisfying and authentic gyro experience made easily at home.

Ingredients

Beef and Marinade:

  • 3 pounds beef chuck roast, sliced into thin quarter inch strips
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 Tablespoons olive oil
  • 2 1/2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 2 Tablespoons fresh lemon juice

For Serving:

  • 5 soft pitas
  • 5 lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1/4 of a red onion, thinly sliced
  • 1 English cucumber, sliced and halved

Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 clove garlic, finely minced
  • 1 Tablespoon fresh lemon juice
  • 1 Tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried dill weed
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare Tzatziki Sauce: Combine plain Greek yogurt, minced garlic, fresh lemon juice, olive oil, red wine vinegar, dried dill weed, salt, and pepper in a bowl. Mix well until smooth and refrigerate until ready to serve, allowing flavors to meld.
  2. Prepare Beef for Cooking: Trim any large pieces of fat from the beef chuck roast. Slice the meat into thin, quarter-inch strips for even cooking and optimal texture in the gyros.
  3. Marinate and Cook in Slow Cooker: Place the sliced beef in the bottom of the slow cooker. In a small bowl, mix olive oil, garlic powder, oregano, ground cumin, dried thyme, fresh lemon juice, salt, and pepper. Pour this marinade over the beef, cover, and cook on LOW for 6 hours or until the meat is tender and flavorful.
  4. Marinate and Cook in Instant Pot: Place the sliced beef in the Instant Pot. In a small bowl, combine 1/3 cup water with olive oil, garlic powder, oregano, ground cumin, dried thyme, fresh lemon juice, salt, and pepper. Pour over the beef in the pot. Seal the Instant Pot, set to manual/high pressure, and cook for 30 minutes. After cooking, allow the pressure to release naturally for 15 minutes before opening. Taste and adjust seasoning if necessary.
  5. Assemble Gyros: Place a lettuce leaf inside each soft pita. Top with the cooked beef strips, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and a generous dollop of the chilled tzatziki sauce. Serve immediately for the best taste and texture.

Notes

  • Make Ahead: Tzatziki sauce and vegetables can be prepared in advance and stored separately in the refrigerator until needed.
  • Freezing: Beef can be frozen sliced with the marinade in a freezer-safe bag before cooking or frozen after cooking. Thaw completely in the refrigerator before cooking or reheating.
  • Ensure the beef is sliced thinly to achieve optimal tenderness and flavor absorption during cooking.
  • Adjust seasoning to taste after cooking to suit personal preference.
