These Black Bean Flautas, also known as taquitos, are crispy, rolled-up corn tortillas filled with a flavorful black bean mixture. Perfect for a quick weekday dinner or a lazy lunch, they require only 7 main ingredients and are easy to prepare. You can choose to fry, bake, or air-fry them for a delicious, crunchy treat served with your favorite toppings like guacamole, cilantro, salsa, or hot sauce.

Ingredients

Main Ingredients

  • 1 can low sodium black beans
  • 8–10 corn tortillas
  • ½ white onion, diced
  • 1 jalapeño pepper, diced
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½–¾ cup vegetable broth or water
  • Salt and pepper to taste

Optional Seasonings

  • 2 tbsp canola oil (optional, for frying or brushing)
  • ½ tsp chili powder (optional)

Toppings (Optional)

  • Guacamole
  • Cilantro
  • Tapatio hot sauce
  • Salsa

Instructions

  1. Prepare the filling: Drain and rinse the black beans. Dice the white onion and jalapeño pepper finely.
  2. Sauté aromatics: Heat a medium-sized pan over medium-high heat. Add about 2 tablespoons of vegetable broth along with the diced onion and jalapeño. Cook for about 5 minutes until the onion becomes translucent, adding more vegetable broth as needed if the pan dries up.
  3. Cook the beans: Add the rinsed black beans and the remaining vegetable broth to the pan. Cook for another 5 minutes until the beans are hot, soft, and mashable. Season with cumin, garlic powder, salt, pepper, and chili powder if using. Stir and then set aside.
  4. Warm the tortillas: Heat a large griddle or skillet over medium-high heat. Once hot, warm each tortilla for 30 seconds on each side to make them pliable and prevent breakage when rolling. Alternatively, warm tortillas in the microwave briefly. Set warmed tortillas aside on a cutting board.
  5. Roll the flautas: Place a heaping tablespoon of the bean mixture on one side of each tortilla and roll tightly. Secure with a toothpick if desired or place the seam side down to prevent unrolling.
  6. Choose your cooking method:
    • Frying: Heat ¼ to ½ cup of canola or vegetable oil in a pan over medium-high heat. When hot, add 3-4 flautas carefully and fry for 3-5 minutes on each side until golden brown and crispy. Drain on paper towels. Repeat with remaining flautas.
    • Oven-Baking: Preheat oven to 400°F (204°C). Arrange flautas on a baking tray and lightly brush with oil if desired. Bake for 16-20 minutes until golden and crispy.
    • Air-Frying: Lightly brush flautas with oil if you like. Air fry 4-5 flautas at 390°F (199°C) for 11-12 minutes until crispy and golden.
  7. Serve: Remove toothpicks if used and serve with optional toppings such as guacamole, cilantro, salsa, or hot sauce like Tapatio.

Notes

  • Warming the tortillas before rolling prevents them from cracking or breaking.
  • If you prefer a milder flavor, deseed the jalapeño before dicing.
  • Vegetable broth keeps the filling moist without adding extra fat.
  • Canola oil is recommended for frying due to its neutral flavor and high smoke point.
  • Dish can be made vegan by using vegetable broth and avoiding toppings like cheese or sour cream.
  • Leftover flautas can be refrigerated and reheated in an oven or air fryer to maintain crispiness.
