It is gluten-free and can easily be adapted to a vegan diet, offering a comforting meal that almost tastes like dessert.

Ingredients

Oatmeal Base

  • 2 very ripe bananas (about 1 cup mashed)
  • 1 ½ cups unsweetened almond milk
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats
  • 2 tablespoons flaxseed
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • ½ cup walnuts, roughly chopped
  • 1 cup blueberries (fresh or frozen)

Topping

  • 1 cup vanilla yoghurt
  • Banana slices (for garnish)
  • Blueberries (for garnish)
  • Maple syrup, to taste

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch (20×20 cm) baking dish to prevent sticking.
  2. Mash Bananas and Combine Wet Ingredients: In a mixing bowl, mash the ripe bananas thoroughly until creamy. Stir in the unsweetened almond milk, maple syrup, and vanilla extract until well combined.
  3. Add Dry Ingredients: To the same bowl, add rolled oats, flaxseed, chia seeds, baking powder, cinnamon, and salt. Mix all ingredients together to evenly distribute.
  4. Incorporate Nuts and Blueberries: Gently fold in the chopped walnuts and blueberries, ensuring they are evenly spread throughout the mixture.
  5. Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish. Spread it out evenly to create a uniform layer. Optionally, add extra banana slices or blueberries on top for added flavor and presentation.
  6. Bake: Place the dish in the preheated oven and bake for 40-45 minutes until the edges are lightly golden and the oatmeal is set.
  7. Cool and Serve: Allow the baked oatmeal to cool for a few minutes before slicing. Serve with vanilla yogurt, extra blueberries, banana slices, and a drizzle of maple syrup for sweetness.

Notes

  • Use very ripe bananas for natural sweetness and better texture.
  • Blueberries can be fresh or frozen; no need to thaw when using frozen.
  • This recipe is gluten-free but ensure your oats are certified gluten-free if needed.
  • To make it vegan, use plant-based vanilla yogurt or omit the topping yogurt entirely.
  • Store leftovers in the refrigerator for up to 4 days and reheat gently before serving.
  • Customize the recipe by adding other nuts or seeds according to preference.
