Ingredients

Salad Ingredients

  • 2 packages Applegate Naturals Grilled Chicken Breast Strips (about 3 cups, cubed) or homemade grilled chicken breast cubes
  • 1/2 cup fresh blueberries
  • 1/3 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped walnuts
  • 1 Tbsp fresh rosemary leaves, chopped
  • 1/3 to 1/2 cup mayonnaise (recommend Primal Kitchen or homemade)
  • Sea salt & pepper to taste
  • 2 green onions, ends trimmed and sliced (white part and halfway up the green part)
  • Fresh lemon wedges (optional)
  • Butter lettuce leaves, mixed greens, cucumber slices, or crackers for serving (optional)

Instructions

  1. Prepare the Chicken: Remove the grilled chicken from the packages and roughly chop into bite-sized cubes.
  2. Combine Ingredients: In a large mixing bowl, combine the chopped grilled chicken, fresh blueberries, diced celery, diced red onion, chopped walnuts, and fresh chopped rosemary.
  3. Add Mayonnaise and Seasonings: Start by adding 1/3 cup of mayonnaise to the salad mixture. Gently stir to combine all ingredients evenly. Add additional mayonnaise up to 1/2 cup if desired to reach your preferred creaminess. Season with sea salt and freshly ground black pepper to taste.
  4. Garnish and Serve: Garnish the salad with the sliced green onions. Serve the salad tucked into butter lettuce wraps, over a bed of mixed greens, with cucumber slices, or alongside your favorite crackers. Optionally, serve with fresh lemon wedges for an added citrus zest.

Notes

  • For best flavor, use fresh, high-quality grilled chicken breast strips or grill your own chicken at home.
  • Adjust the amount of mayonnaise according to your taste and desired salad creaminess.
  • Fresh rosemary is key for the fragrant herbaceous flavor. Avoid dried rosemary as it can be too overpowering.
  • This salad can be made ahead and chilled for an hour to let flavors meld.
  • Serve immediately for best texture and freshness.
