Ingredients

Blueberry Sauce

  • 1 cup fresh blueberries, stems removed
  • 2 teaspoons granulated sugar
  • 1 tablespoon fresh lemon juice, not bottled

Cookies

  • 2 cups all purpose flour
  • 1½ tablespoons cornstarch
  • 1½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter, room temperature
  • 1½ cups granulated sugar, divided
  • 2 tablespoons milk
  • 1 large egg
  • ¼ teaspoon purple food dye (liquid, optional)

Instructions

  1. Make the blueberry sauce: In a medium pot over medium-low heat, combine fresh blueberries, sugar, and lemon juice. Cook while stirring frequently until the blueberries break down and the mixture thickens, about 5-8 minutes. Set aside to cool.
  2. Combine the dry ingredients: In a large bowl, whisk together the flour, cornstarch, baking powder, and kosher salt. Set aside.
  3. Cream the butter and sugar: In another large bowl, beat the unsalted butter with 1¼ cups of granulated sugar until the mixture becomes light and fluffy, about 3-4 minutes.
  4. Add the blueberry sauce: Stir 3 tablespoons of the cooled blueberry sauce into the creamed butter and sugar mixture. Reserve any extra sauce for other uses like pancakes.
  5. Add the remaining liquids: Mix in the milk, egg, and purple food dye (if using) until just combined.
  6. Add dry ingredients: Gradually incorporate the dry flour mixture into the wet ingredients, mixing until no dry bits remain and the dough is cohesive.
  7. Chill the dough: Cover the bowl tightly with plastic wrap and refrigerate for 3 hours to firm up the dough.
  8. Prepare for baking: Preheat the oven to 325ºF (163ºC). Line a baking sheet with parchment paper or a Silpat liner. Set aside.
  9. Prepare sugar coating: Pour the remaining ¼ cup of granulated sugar onto a shallow plate for rolling the cookie dough balls.
  10. Form the cookies: Scoop 1 heaping tablespoon of chilled dough and roll into a ball with your hands.
  11. Roll in sugar: Coat each dough ball evenly by rolling it in the granulated sugar on the plate, then place it spaced apart on the prepared baking sheet. About 6 cookies fit per sheet.
  12. Chill extra dough: Keep any remaining shaped dough refrigerated until ready to bake the next batch to prevent softening.
  13. Bake: Bake the cookies in the preheated oven for 15 minutes, or until cracks form on the surface.
  14. Cool: Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely, about 20 more minutes, to avoid breaking while warm.

Notes

  • Using fresh lemon juice (not bottled) in the blueberry sauce gives a brighter flavor.
  • The optional purple food dye adds a pretty color but can be omitted without affecting taste.
  • Chilling the dough is essential for better texture and ease of handling.
  • Rolling in sugar gives a lovely crunchy exterior contrast to the soft cookie inside.
  • Extra blueberry sauce can be refrigerated and used as a topping for pancakes or yogurt.
  • Cookies should cool on the baking sheet to set properly and avoid breaking.
