Ingredients

Blueberry Filling

  • 18 ounces fresh blueberries
  • ¼ cup sugar
  • ¼ cup brown sugar
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Puff Pastry

  • 2 boxes puff pastry sheets

Cream Cheese Filling

  • 8 ounces cream cheese, softened
  • 1 egg yolk
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Egg Wash

  • 1 egg
  • 1 tablespoon water

To Finish

  • ¼ cup powdered sugar

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Set it aside for assembling the pastries.
  2. Make Blueberry Filling: Rinse the fresh blueberries and place them in a medium saucepan. Add the sugar, brown sugar, lemon zest, lemon juice, and cornstarch. Stir to combine and cook over medium heat, stirring frequently, until the blueberries burst and the mixture thickens slightly. Remove from heat and let cool completely.
  3. Prepare Cream Cheese Filling: In a medium bowl, beat the softened cream cheese for 2 to 3 minutes until smooth and creamy. Add the egg yolk, sugar, vanilla extract, and lemon juice. Beat until fully incorporated and smooth.
  4. Roll Out Puff Pastry: Lightly flour a clean surface and roll out the puff pastry sheets. Place one sheet onto the prepared baking sheet. (Cutting the pastry diagonally before filling can make rolling into crescents easier.)
  5. Assemble Pastries: Spread half of the cream cheese filling evenly over the first puff pastry sheet. Spoon half of the cooled blueberry filling on top of the cream cheese layer. Fold with the remaining puff pastry sheet on top. Make diagonal cuts in the assembled sheet and gently roll each piece into crescent shapes. Repeat with the remaining pastry sheets and fillings.
  6. Apply Egg Wash: In a small bowl, whisk together the egg and water. Brush this egg wash generously over the rolled pastries to help them brown beautifully during baking.
  7. Bake: Place the pastries in the preheated oven and bake for about 20 minutes or until they are puffed up and golden brown on top.
  8. Finish and Serve: Remove pastries from the oven and allow to cool slightly. Dust with powdered sugar before serving for a touch of sweetness and elegant presentation.
