This Bourbon Caramel Sauce is a rich, luscious topping perfect for drizzling over desserts like ice cream, cakes, or fresh fruit. Made with classic caramel ingredients enhanced by a splash of bourbon, it offers a deep, complex flavor with a buttery finish and hints of vanilla. It’s easy to make on the stovetop and can be stored in the fridge for later use.

Ingredients

Caramel Base

  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons corn syrup
  • Pinch of salt

Finishing Ingredients

  • 1/2 cup heavy cream
  • 1 tablespoon bourbon
  • 4 tablespoons unsalted butter (1/2 stick)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Cook the Sugar Mixture: In a medium saucepan over medium-high heat, combine the granulated sugar, water, corn syrup, and a pinch of salt. Swirl the pan occasionally but do not stir. Cook until the sugar mixture turns the color of iced tea, about 10 minutes. Watch closely to avoid scorching as the caramel forms.
  2. Add Cream and Bourbon: Remove the saucepan from heat carefully. Slowly add the heavy cream and bourbon to the hot caramel mixture; the sauce will bubble vigorously, so be cautious of steam. Whisk continuously to combine into a smooth mixture.
  3. Finish with Butter and Vanilla: Keep the saucepan off the heat and whisk in the unsalted butter and pure vanilla extract until fully incorporated, creating a rich and silky sauce.
  4. Cool and Store: Transfer the caramel sauce to a bowl and let it cool to thicken slightly. Store covered in the refrigerator. To serve, reheat gently in the microwave or over low heat on the stove. This sauce is delightful served warm or cold.
