A creamy and comforting Broccoli and Stilton Soup that blends fresh or frozen broccoli with tangy Stilton cheese for a rich and flavorful meal. Perfect as a starter or light lunch, this soup uses simple ingredients and offers flexibility with stovetop or slow cooker methods to suit your schedule.

Ingredients

Main Ingredients

  • 800 g (1.7 lb) Broccoli, fresh or frozen
  • 1 Onion, peeled and chopped
  • 2 Garlic cloves, peeled and crushed
  • 750 ml (3.25 cups) Stock (vegetable or chicken as preferred)
  • 300 ml (1.25 cups) Milk
  • 160 g (6 oz) Stilton cheese, grated or crumbled

To Serve

  • 40 g (1.5 oz) Stilton cheese, crumbled on top
  • Croutons, optional

Instructions

  1. Prepare the Vegetables: Wash and chop the broccoli into large chunks. Finely slice the onion and crush the garlic cloves. If using frozen broccoli, you can skip washing and chopping and add it directly into the pan.
  2. Cook the Vegetables: In a large saucepan, combine the broccoli, chopped onion, crushed garlic, stock, and season generously with salt and pepper. Bring the mixture to a boil with the lid on, then reduce heat and simmer gently for 15 minutes or until the vegetables are tender.
  3. Blend the Soup: Remove the saucepan from the heat. Add the milk and grated or crumbled Stilton cheese. Using a blender, blend the mixture until smooth and creamy.
  4. Reheat and Serve: If needed, return the soup to gentle heat to warm through. Serve topped with the reserved crumbled Stilton cheese and croutons if desired.
  5. Slow Cooker Option: Place the broccoli, onion, garlic, and stock in the slow cooker. Cook on HIGH for 3-4 hours or LOW for 5-6 hours until vegetables are tender. Add the milk and Stilton cheese, then blend until smooth. Serve immediately or keep warm on HIGH for a further 15-30 minutes if desired.

Notes

  • Vegetables: Both fresh and frozen broccoli work well in this recipe, offering convenience and flexibility.
  • Stock: Use vegetable or chicken stock according to your preference. Adjust the amount to make the soup thinner or thicker as desired.
  • Serving Suggestions: Garnish with extra Stilton and add croutons for texture and presentation.
  • Storage: The soup can be refrigerated for up to 3 days and reheated gently before serving.
