A creamy and comforting Broccoli and Stilton Soup that blends fresh or frozen broccoli with tangy Stilton cheese for a deliciously rich flavor. Perfect as a warming starter or light meal, this soup is easy to prepare using stovetop or slow cooker methods.

Ingredients

Main Ingredients

  • 800 g (1.7 lb) Broccoli, fresh or frozen
  • 1 Onion, peeled and chopped
  • 2 Garlic cloves, peeled and crushed
  • 750 ml (3.25 cups) Stock (vegetable or chicken)
  • 300 ml (1.25 cups) Milk
  • 160 g (6 oz) Stilton cheese, grated or crumbled

To Serve

  • 40 g (1.5 oz) Stilton cheese, crumbled on top
  • Croutons, optional

Instructions

  1. Prepare the vegetables: Wash and chop the broccoli into large chunks. Finely slice the onion and crush the garlic cloves. If using frozen broccoli, no need to thaw; proceed to the next step.
  2. Cook the vegetables: Place broccoli, onion, garlic, stock, salt, and pepper into a large saucepan. Bring to a boil with the lid on, then reduce to a simmer for 15 minutes or until vegetables are tender.
  3. Blend the soup: Remove from heat, then add milk and 160g of Stilton cheese. Use a blender to puree the soup until smooth and creamy.
  4. Reheat if necessary: Warm the soup again gently if it has cooled too much after blending.
  5. Serve: Ladle the soup into bowls, top with the remaining 40g of crumbled Stilton cheese and croutons if desired.
  6. Slow cooker method (alternative): Add broccoli, onion, garlic, and stock to slow cooker. Cook on HIGH for 3-4 hours or LOW for 5-6 hours. Add milk and 160g Stilton, then blend until smooth. Serve immediately or heat on HIGH for an additional 15-30 minutes for a hotter soup.

Notes

  • Vegetables can be fresh or frozen; both work well.
  • Stock choice can be vegetable or chicken, depending on your preference.
  • Adjust stock quantity to achieve desired soup thickness; more for thinner, less for thicker.
  • Optional croutons add a crunchy texture when serving.
