These Broccoli Cheese Balls are crispy, cheesy, and packed with flavorful broccoli and a mix of Velveeta, Colby, and Cheddar cheeses. Perfect as a savory appetizer or snack, these bite-sized delights are coated in panko breadcrumbs and fried to golden perfection for a crunchy exterior and gooey, cheesy interior.

Ingredients

Main Ingredients

  • Red pepper flakes, to taste
  • 1 ½ cups broccoli florets, steamed and finely chopped
  • 4 oz Velveeta cheese, finely chopped
  • 1 cup Colby cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 3 large eggs
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 2 ¼ cups Panko bread crumbs, divided
  • Oil for frying (such as vegetable or canola oil)

Instructions

  1. Prepare the Cheese and Broccoli Mixture: In a large mixing bowl, combine the finely chopped steamed broccoli, Velveeta cheese, shredded Colby cheese, shredded Cheddar cheese, ¼ cup of the panko bread crumbs, red pepper flakes to taste, 1 beaten egg, and salt and pepper. Stir until well mixed.
  2. Form the Balls: Shape the cheese and broccoli mixture into 1-inch diameter balls and place them on a parchment paper-lined baking sheet.
  3. Chill: Refrigerate the formed balls for 30 minutes to help them firm up and hold their shape during frying.
  4. Prepare Breading Stations: Set up three shallow bowls: one with the flour, one with the remaining 2 beaten eggs, and one with the rest of the panko bread crumbs.
  5. Heat Oil: Heat enough oil in a deep-sided pot or skillet to reach 375°F (190°C) for frying.
  6. Bread the Balls: Remove the broccoli cheese balls from the fridge. Roll each ball first in the flour, then dip into the beaten eggs, and finally coat thoroughly in the panko bread crumbs.
  7. Fry: Carefully place the breaded balls into the hot oil and fry them until golden brown and crispy, about 2-3 minutes per batch. Avoid overcrowding the pan.
  8. Drain and Serve: Use a slotted spoon to remove the fried balls and drain them on a paper towel-lined plate. Serve warm.

Notes

  • Ensure broccoli is well steamed and finely chopped to help the balls hold together better.
  • Chilling the mixture is crucial for easier frying and less oil absorption.
  • Maintain oil temperature at around 375°F to get a crispy crust without greasy balls.
  • Use fresh oil or strain used oil to avoid off-flavors in future frying.
  • These can be served with a dipping sauce such as ranch, marinara, or spicy mayo.
