These Broccoli Tots are a delicious and healthy alternative to traditional tater tots, made with fresh or frozen broccoli, cheese, and a blend of flavorful seasonings. They’re crispy on the outside and tender on the inside, perfect as a snack or side dish.

Ingredients

Vegetables

  • 3 cups fresh or frozen broccoli florets

Wet Ingredients

  • 2 large eggs

Dry Ingredients

  • ¼ teaspoon onion powder
  • ½ cup grated cheddar cheese or grated parmesan cheese
  • ⅔ cup almond or oat flour
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lightly greasing it with a thin layer of oil or lining it with parchment paper to prevent sticking.
  2. Steam the broccoli: Steam the broccoli florets for 5 minutes until tender. Then, rinse them immediately under cold water to halt cooking and maintain a bright green color. Drain the broccoli thoroughly using towels or a strainer to remove as much moisture as possible.
  3. Process the broccoli: Place the drained broccoli into a food processor fitted with an “S” blade and pulse until finely chopped. If you don’t have a food processor, finely chop the broccoli by hand until almost crumb-like.
  4. Mix ingredients: In a large mixing bowl, combine the finely chopped broccoli with eggs, onion powder, grated cheese, almond or oat flour, Italian seasoning, garlic powder, and sea salt. Stir thoroughly until all ingredients are well incorporated.
  5. Shape the tots: Using a heaping tablespoon or a small cookie scoop, portion the broccoli mixture into small balls. Gently press each ball to form a tot shape and arrange them evenly on the prepared baking sheet.
  6. Bake the tots: Bake in the preheated oven for 20-25 minutes, flipping the tots halfway through baking to ensure they brown evenly on all sides. They should turn golden brown and crispy on top.
  7. Serve: Remove the broccoli tots from the oven and serve hot with your favorite dipping sauces like ketchup or ranch dressing. Enjoy this tasty, healthy snack!

Notes

  • Make sure to drain the broccoli thoroughly to prevent soggy tots.
  • You can substitute almond flour with oat flour or gluten-free flour to suit dietary needs.
  • Feel free to experiment with different cheeses, such as parmesan for a sharper flavor.
  • These tots freeze well; bake from frozen adding a few extra minutes to the cooking time.
  • For extra crispiness, broil the tots for the last 1-2 minutes of baking, watching carefully to avoid burning.
