Ingredients

Syrup

  • 1/2 cup dark brown sugar, packed
  • 1/4 cup water

Tapioca Pearls

  • 1/4 cup quick-cooking black tapioca pearls
  • 1 Tbsp dark brown sugar

Beverage

  • 1 cup whole milk
  • 2 Tbsp heavy cream
  • 1 cup ice cubes (or as desired)

Instructions

  1. Make the Brown Sugar Syrup: In a saucepan over medium-high heat, whisk together 1/2 cup dark brown sugar and 1/4 cup water until sugar dissolves. Bring mixture to a boil, then reduce heat to medium-low and let it simmer gently for 5 to 6 minutes, or until the temperature reaches 230-240°F. Be careful not to overcook as it may harden. Remove from heat and allow the syrup to thicken and cool to room temperature.
  2. Cook the Tapioca Pearls: Bring a pot of water to a rolling boil. Add 1/4 cup quick-cooking black tapioca pearls and cook as per package instructions (usually about 5-7 minutes), stirring occasionally to prevent sticking. Once cooked, drain the pearls and transfer them to a bowl. Mix in 1 tablespoon of dark brown sugar while the pearls are still warm to prevent sticking and enhance sweetness.
  3. Assemble the Drink: In a 16-ounce glass, add 1/4 cup of the cooled brown sugar syrup followed by 1/4 cup of the cooked and sweetened boba pearls. Add about 1 cup of ice cubes to the glass. Pour in 1 cup of whole milk and then add 2 tablespoons of heavy cream. Stir well to combine all ingredients.
  4. Serve and Enjoy: Use a large boba straw to sip the drink, ensuring you can enjoy both the creamy milk tea and chewy tapioca pearls together.

Notes

  • Do not overcook the sugar syrup; maintain the simmer under 240°F to avoid hardening.
  • Prepare extra brown sugar syrup in advance and store it in the refrigerator for quick drink assembly later.
  • Adding sugar to the cooked tapioca pearls prevents them from sticking together and enhances their flavor.
  • Use a specially sized boba straw to easily enjoy the tapioca pearls while drinking.
