This Bubble Up Pizza Casserole with Biscuits is a kid-friendly, high-protein, and easy weeknight dinner that brings all your favorite pizza flavors into one gooey, delicious casserole. Featuring lean ground beef, bell peppers, pizza sauce, fluffy biscuit pieces, mozzarella cheese, and turkey pepperoni, this casserole is perfect for busy families looking for a mess-free, comforting meal.

Ingredients

Meat and Veggies

  • 1 lb. lean ground beef (96/4)
  • 2 medium bell peppers (red & green), finely diced (optional)

Other Ingredients

  • 14 oz. jar pizza sauce
  • 1 (16-oz.) can Pillsbury Grands Biscuits
  • 1.5 cups shredded mozzarella cheese
  • 1.5 oz sliced turkey pepperoni

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spatula as it cooks. Season with about 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 3 to 4 minutes until the beef starts to brown but is not fully cooked yet.
  3. Add Diced Peppers: Stir in the finely diced red and green bell peppers. Continue cooking until the peppers soften and the beef is fully browned and no longer pink. Drain any excess liquid from the skillet.
  4. Mix in Pizza Sauce: Pour the jar of pizza sauce into the beef and pepper mixture and stir to combine thoroughly. Remove from heat.
  5. Prepare Biscuits: Cut each biscuit into six pieces. Place all the biscuit pieces evenly into the greased casserole dish, spreading them out to cover the bottom.
  6. Assemble Casserole: Pour and spread the beef and sauce mixture over the biscuit pieces in the casserole dish. Sprinkle 1.5 cups of shredded mozzarella cheese evenly on top, then layer with the sliced turkey pepperoni.
  7. Bake: Place the casserole uncovered in the preheated oven and bake for 25 to 30 minutes. Bake until the biscuit pieces have puffed up and are cooked through. If the top browns too quickly, tent with foil to prevent burning.
  8. Cool and Serve: Let the casserole cool for 5 to 10 minutes to set. Slice and serve warm for a delicious, comforting pizza-flavored meal.

Notes

  • To make gluten-free: Use a gluten-free baking mix to prepare quick biscuit dough, form into small balls, and place in the greased baking dish instead of canned biscuits.
  • Add more vegetables like mushrooms, cooked broccoli, or onions to increase fiber and nutrition.
  • Increase protein by adding up to 1.5 lbs of ground beef; the casserole will still turn out great.
  • Reheat leftovers in an air fryer for a crispy outside and soft, doughy inside.
  • This casserole freezes well: once cooled, cut into pieces, wrap individually in foil or plastic wrap, and store in an airtight freezer bag.
