Ingredients

Peanut Butter Filling:

  • 4 oz. cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1 large egg, room temperature
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Chocolate Banana Bread:

  • 3 ripe bananas
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/3 cup sour cream or Greek yogurt
  • 4 oz. melted chocolate, cooled
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 cup chocolate chips
  • Pinch kosher salt

Optional Peanut Butter Glaze:

  • 2 tablespoons milk
  • 1 cup powdered sugar
  • 2 tablespoons melted peanut butter
  • Additional water as needed

Instructions

  1. Prepare Pan: Preheat the oven to 350°F. Line a 9×5 loaf pan with parchment paper, allowing the paper to hang over the two longer sides for easy removal later. Set aside.
  2. Make Peanut Butter Filling: In a medium bowl, combine softened cream cheese, creamy peanut butter, egg, vanilla extract, granulated sugar, and brown sugar. Use an electric mixer to beat until smooth and creamy. Refrigerate this mixture while you prepare the banana bread batter.
  3. Make Chocolate Banana Bread Batter: In a large bowl, mash the ripe bananas thoroughly. Add the melted unsalted butter, granulated sugar, eggs, and vanilla extract to the mashed bananas. Whisk together until smooth and fully combined.
  4. Add Sour Cream and Chocolate: Stir in the sour cream (or Greek yogurt) and cooled melted chocolate until fully incorporated and smooth.
  5. Combine Dry Ingredients: In a separate bowl, sift or whisk together all-purpose flour, unsweetened cocoa powder, baking soda, and a pinch of kosher salt.
  6. Mix Dry Ingredients with Wet: Gradually add the dry ingredients to the wet banana mixture, stirring gently until the batter is smooth and well combined. Avoid overmixing to keep the bread tender.
  7. Fold in Chocolate Chips: Using a rubber spatula, gently fold the chocolate chips into the batter.
  8. Assemble in the Pan: Pour half of the chocolate banana bread batter into the prepared loaf pan and spread evenly. Spoon and smooth out the peanut butter filling layer over the batter. Finally, top with the remaining banana bread batter and spread evenly using an offset spatula.
  9. Bake: Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Check near the end of baking to avoid overbaking.
  10. Cool: Let the bread cool in the pan for 10 minutes. Using the parchment paper tabs, lift the bread out onto a wire rack to cool for an additional 15 minutes before slicing and serving.
  11. Optional Glaze: Mix 2 tablespoons milk, 1 cup powdered sugar, and 2 tablespoons melted peanut butter in a small bowl. Add a little water if needed to reach a pourable consistency. Drizzle this glaze over the completely cooled banana bread.

Notes

  • For best results, use very ripe bananas for maximum sweetness and moisture.
  • Ensure the cream cheese is softened to avoid lumps in the peanut butter filling.
  • Be careful not to overmix the batter to keep the bread light and tender.
  • You can substitute sour cream with Greek yogurt for a tangier flavor and added protein.
  • The optional peanut butter glaze adds extra sweetness but can be omitted for a less sweet version.
  • Store leftovers wrapped at room temperature for up to 3 days or refrigerated for up to 5 days.
  • Bread can also be frozen for up to 2 months; thaw overnight in the refrigerator.
