This Buffalo Chicken and Rice recipe is a flavorful, one-pan meal combining tender chicken, spicy buffalo sauce, and nutritious vegetables simmered with rice for a comforting and hearty dish. It features a perfect balance of heat and creaminess with an optional addition of nonfat Greek yogurt and cheddar cheese for extra richness.

Ingredients

Protein & Vegetables

  • 1 tablespoon olive oil
  • 1 ½ lbs boneless, skinless chicken breasts, cut into small cubes
  • 1 cup diced celery
  • ½ cup diced onion
  • 2 tablespoons garlic, minced
  • 2 cups grated carrots

Liquids & Grains

  • 3 cups chicken broth, low or no salt
  • 1 cup dry long grain white rice
  • ½ cup buffalo sauce

Spices & Seasonings

  • 3 teaspoons dried parsley
  • 3 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ¼ teaspoon black pepper

Finishing Touches

  • ½ cup cheddar cheese
  • 1 cup nonfat Greek yogurt (optional)

Instructions

  1. Heat Pan and Add Oil: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil, ensuring the oil evenly coats the bottom of the pan for sautéing.
  2. Sauté Chicken: Add the cubed boneless, skinless chicken breasts to the pan and sauté for 8-10 minutes until the edges start to brown. The chicken doesn’t need to be fully cooked at this stage since it will continue cooking later.
  3. Add Vegetables: Stir in the diced celery, onion, and minced garlic with the chicken. Continue sautéing for an additional 3 minutes to soften vegetables and develop flavor.
  4. Combine Liquids, Rice, and Spices: Pour in 3 cups of low or no salt chicken broth along with 2 cups of grated carrots, 1 cup of dry long grain white rice, and ½ cup of buffalo sauce. Add dried parsley, garlic powder, onion powder, and black pepper. Stir everything to combine.
  5. Cook Covered: Cover the skillet and cook the mixture over medium heat for about 10 minutes. Stir occasionally every few minutes to prevent the rice from sticking to the bottom of the pan. (Tip: warming the chicken broth in the microwave before adding it can speed up the cooking process.)
  6. Finish with Cheese and Yogurt: Once the rice is tender and cooked through, stir in ½ cup of cheddar cheese until melted and incorporated. If using, gently fold in 1 cup of nonfat Greek yogurt for added creaminess.
  7. Serve: Optionally drizzle extra buffalo sauce over the top for enhanced spiciness. Serve hot and enjoy this hearty, flavorful buffalo chicken and rice dish.

Notes

  • To reduce cooking time, warm the chicken broth before adding it to the skillet.
  • For a creamier texture and milder heat, add nonfat Greek yogurt at the end.
  • Adjust buffalo sauce quantity to suit your preferred spice level.
  • The dish can be served as a complete meal or paired with a fresh green salad for balance.
  • Leftovers store well in the refrigerator for up to 3 days.
