This Buffalo Chicken Casserole is a flavorful, hearty one-pan dish combining tender chicken pieces, spicy hot sauce, savory rice, and a blend of cheddar and blue cheeses for a creamy, tangy finish. Perfect for a weeknight dinner, it offers the spicy kick of Buffalo wings in a comforting casserole form.

Ingredients

Chicken and Vegetables

  • 1 1/2 pound boneless chicken breast, cut into bite-size pieces
  • 2 tablespoons butter
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1/4 cup chopped green onions

Rice and Sauce

  • 1 1/2 cups long grain rice
  • 1/2 cup Frank’s RedHot Sauce
  • 2 1/2 cups water or chicken broth

Cheeses

  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese

Instructions

  1. Prepare Ingredients: Cut the chicken into 1-inch bite-sized pieces and chop all vegetables including onions, celery, and green onions to ensure even cooking and flavor distribution.
  2. Sauté Vegetables: Place butter in a large skillet or sauté pan with a lid over medium heat. Add chopped onions and celery, sautéing for 3-5 minutes until they soften and release their flavors.
  3. Combine and Cook: Add the chicken pieces, rice, Frank’s RedHot Sauce, chicken broth (or water), and 1/4 teaspoon salt to the skillet. Stir well, then cover with the lid. Bring the mixture to a boil, then reduce heat to a simmer and let cook for 15 minutes until the rice absorbs the liquid and small air vent holes appear on the surface.
  4. Finish and Season: Fluff the rice with a fork to separate the grains. Stir in shredded cheddar cheese, crumbled blue cheese, and chopped green onions until the cheeses melt into the casserole. Taste and season with additional salt and pepper as needed before serving.

Notes

  • You can use chicken broth instead of water for enhanced flavor.
  • Adjust the amount of hot sauce to control the spice level.
  • Use fresh blue cheese for best flavor in the topping.
  • Covering the skillet during cooking is important to properly steam the rice.
  • For a creamier texture, you may add a splash of milk or cream along with the cheese at the end.
