This Buffalo Chicken Flatbread recipe offers a perfect blend of spicy buffalo sauce, tender chicken, and creamy blue cheese on a crispy flatbread base. Easy to make and ideal as an appetizer or a casual dinner, these flatbreads bring bold flavors and melty mozzarella cheese topped with fresh green onions for a zesty finish.

Ingredients

Flatbread Base

  • 2 flatbreads
  • 2 tsp olive oil

Toppings

  • ½ cup buffalo wing sauce
  • 1 ½ cups cooked chicken, diced
  • 1 cup mozzarella cheese, shredded
  • ⅓ cup blue cheese dressing
  • ⅓ cup green onions, sliced

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (218°C) to ensure it is evenly heated and ready for baking the flatbreads.
  2. Prepare the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Brush the edges lightly with olive oil to enhance flavor and promote even browning.
  3. Bake the Flatbreads: Bake the flatbreads in the preheated oven for 5 minutes until warmed through and just beginning to crisp, creating a sturdy base for the toppings.
  4. Add the Toppings: Remove the flatbreads from the oven carefully. Spread buffalo wing sauce evenly over each flatbread. Top with diced cooked chicken and shredded mozzarella cheese. Drizzle blue cheese dressing on top to add a creamy and tangy element.
  5. Bake the Flatbreads Again: Return the topped flatbreads to the oven and bake for an additional 12–15 minutes, until the edges are slightly browned and the cheese is melted and bubbly. For a beautifully browned top, place the flatbreads under the broiler on high heat for 1–2 minutes, watching closely to prevent burning.
  6. Garnish and Serve: Remove flatbreads from the oven with care. Sprinkle sliced green onions on top, and add extra buffalo sauce and blue cheese dressing if desired. Cut into small squares for an appetizer or large slices for a main dish. Serve immediately to enjoy at peak freshness.

Notes

  • Baking the flatbreads twice ensures a crispier crust and well-melted toppings.
  • Distribute the toppings evenly for consistent flavor in every bite.
  • Keep a close eye on the flatbreads during broiling to avoid burning.
  • Using parchment paper makes cleanup easier and prevents sticking.
