This Buffalo Chicken Tater Tot Casserole is a comforting and flavorful dish combining creamy buffalo chicken topped with crispy golden tater tots. Perfect for game day or a hearty weeknight dinner, it features a spicy, cheesy filling baked to bubbly perfection with a crispy topping.

Ingredients

Buffalo Chicken Mixture

  • 1 8oz package cream cheese, softened at room temperature
  • 1 package ranch seasoning (or 2-3 tablespoons homemade ranch dressing mix)
  • 6 tablespoons cayenne pepper sauce like Frank’s Red Hot Sauce
  • ⅓ cup mayonnaise
  • 1 ½ tablespoons butter, melted and cooled
  • ½ teaspoon Worcestershire sauce
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon ground cayenne (optional)
  • 1 ½ cups chopped cooked chicken
  • 1 cup shredded cheddar cheese, packed (shredded fresh from the block)

Topping

  • 1 package frozen tater tots (about 54-72 tots)
  • Cooking spray (optional, to spray on tater tots for better crispness)

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400ºF (204ºC) and lightly grease a medium baking dish sized approximately 9×9 inches or 7.5×10 inches to prevent sticking.
  2. Mix Buffalo Chicken Base: In a large bowl, combine the softened cream cheese, ranch seasoning mix, cayenne pepper sauce, mayonnaise, melted and cooled butter, Worcestershire sauce, garlic powder, and optional ground cayenne. Use an electric hand mixer or stand mixer to beat the ingredients until smooth and mostly lump-free.
  3. Smooth the Mixture: Scrape down the sides of the bowl with a spatula and continue mixing until the mixture is completely combined and creamy without lumps.
  4. Add Chicken and Cheese: Fold in the chopped cooked chicken and shredded cheddar cheese gently using a silicone spatula until evenly distributed throughout the buffalo chicken mixture.
  5. Assemble the Casserole: Spread the buffalo chicken mixture evenly in the bottom of the prepared baking dish, smoothing it into an even layer.
  6. Arrange Tater Tots: Top the chicken layer with the frozen tater tots arranged in a single layer for even cooking and browning. For extra crispiness, optionally spray the tater tots lightly with cooking spray.
  7. Bake the Casserole: Place the casserole in the preheated oven and bake for about 40 minutes or until the tater tot tops turn golden brown and the filling is bubbly and hot.
  8. Optional Broil for Crispness: If desired, switch your oven to the broil setting and broil the casserole for 2-4 minutes while watching closely to avoid burning. Alternatively, if your baking dish is not broiler-safe, you can increase the oven temperature to 450ºF and bake for an additional 5 minutes to crisp the tater tots.
  9. Cool and Serve: Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped green onions, a drizzle of ranch dressing, blue cheese crumbles, or extra hot sauce as preferred before serving.

Notes

  • Make sure the cream cheese is softened to room temperature to ensure a smooth mixture.
  • Using fresh shredded cheddar cheese provides better melting and flavor compared to pre-shredded varieties.
  • The cayenne pepper in the sauce can be adjusted to control the heat level.
  • Frozen tater tots do not need to be thawed before baking; arrange them directly from frozen.
  • Broiling at the end crisps the tater tot topping nicely but watch carefully to prevent burning.
  • You can substitute cooked rotisserie chicken for convenience.
  • This casserole can be prepared ahead and refrigerated before baking; just add extra baking time if still cold.
